Kidney Bean Quinoa Burgers, Close Call, & Vaquitas


Well THIS was a challenge!  I was trying to make something with less than 5 ingredients, on the cheap, based on what I had on-hand, and of course, VEGAN.  I came up with these Kidney Bean Quinoa Burgers.  These are the raw patties.  I'm still testing them.  They weren't bad.  But I think I will be adding garlic next time!  I would also like to try these in my dehydrator.  What you see above contain the following...Kidney Beans, Tri-Color Quinoa, Smoked Paprika, and Nutritional Yeast.


When I left for work this morning I saw this.  A tree limb fell on or near my Fiat.  I looked and looked and couldn't see any scratches or dents.  That was a close call!

The weather has been overly nuts this winter!  No real snow to speak of...not that I'm complaining...I'm not a fan of snow!  We had 50+ degrees and thunder and lightning yesterday!  VERY unusual for us here in the snow belt.  Over the next couple of days, we could see some snow and today has turned colder with wind gusts!


The feedback I have received so far about adding more animals to my posts was a very positive one!  I won't be doing this every day but I hope to include many more in my posts when I'm able to.

I'll tell you one of the species that has really been on my heart lately is the Vaquita (pictured above).  Look at those eyes!  According to many sites, there are less than 30 individual Vaquitas left.  I've even seen some sources say as few as 12 to  15 remain.  They are only found off the coast of Baja California/Baja Mexico and are usually seen thru illegal fishing operations.  They were discovered in 1950 when a dead bleached skull was found.  The following year 2 (or 3) additional skulls were found and that was enough to declare a new species of porpoise by 1958.  By 1997, the population was estimated at around 600.

To put that into perspective, I graduated in 1997...so in just about 22 years WITH these beauties being on the endangered species list and the focus of many efforts to save them...they have gone from 600 down to between 12-30 individual beings!  It breaks my heart!  But if we can continue to protect them and educate others about them MAYBE we can bring them back from the brink of extinction!

Flatbread & Crunk

This book has been on my wishlist for YEARS now and I finally have it in my possession!  WOOT! 

There has been a lot going on lately and I'm still not ready to talk about it.  But adding this book to my collection helped put a smile on my face!

I told Bianca I was a 'bad blogging buddy' because I'm only NOW getting her book! LOL!

I'm about 'as Yankee as you can get' but I can't wait to jump into some of these recipes!  If you have this book already please tell me some of your faves in comments!



About a month ago I came across this frozen food offering at Wegmans and I grabbed it.  THIS one was pretty tasty but the other one I got wasn't.  I will remember to pass on the no cheese veggie bruschetta looking one but put this Vegan Harvest on my list for when I see it on sale again!

My frig and freezer are looking pretty bare these days.  I guess it's good because I have been eating what I'm buying but then when I am hungry and too lazy to shop I don't really have much to go on that is in-house.

What is one of the most crazy vegan meals you have eaten over the last few months because you have been too lazy or not able to go to the store?

Changes!


Just a quick post today to say HELLO!

And to let you know that I have been changing a lot of things here at My Blissful Journey with even more changes on the way!  First and foremost I have added a FUR KID Section.  Take a look and let me know what you think.  It's kind of like a Hall of Fame...the furkids we currently have and the ones we have lost over the years and still think about daily!  It will tell you a bit about each of them and have photos of each.

I have deleted a few tabs and will be re-working them at some point.

Also, you might have noticed my sidebar and blogroll has had a MAJOR overhaul!  I've been trying to re-connect with blogging buddies I have lost touch with over the years and keep in touch better with those of you I have become close friends with, too!  I want to visit and comment more frequently.  If you don't see your link on my sidebar please let me know!

Fruity Dream Slushie


I'm thinking about posting a variation of this over at Sororitea Sisters because it uses Yerba Mate!  You could either infuse/steep your own Yerba Mate or use a product like I did here!  I used Garden of Life's Yerba Mate OPP Yerba Mate and it worked nicely!  This was a fruity, creamy, slushie sort of a treat.

Fruity Dream Slushie

1 C Frozen Mango, Cubed
6 Strawberries
1 C Pineapple, Cubed
1 C Fresh Orange Juice (or more)
1 T Garden of Life Yerba Mate Organic Plant Protein Powder

Sorry Vegan MoFo! YIKES! Vanilla Pudding!


Well, I SUCK!

I totally blew this years Vegan MoFo for my vegan foodie posts.  At least I was able to feature at least 1 vegan tea a day for Vegan MoFo over at Sororitea Sisters, tho!

I honestly have no idea where to jump in with all of the stuff I have been backlogging to post someday so why not start with a recipe?  I have been really busy but lazy all at the same time so for occasions like this I thought blender options are always nice!

Vanilla Pudding, anyone?

1 C Cashews, Soaked
1 C Cashew/Almond Milk (made at home or store bought)
3 T Coconut Butter (I used Raw Coconut Butter with Coconut Blossom Sugar from Divine Organics)
4 to 8 drops of Liquid Stevia (or other sweetener)
Pinch of Pink Himalayan Sea Salt (optional)

Vegan MoFo ~ BREAKFAST (And Then Some)

Yup!  It's FINALLY HERE!  Vegan Mofo 2015!  This is my 4 year participating...I believe!  It's something I look forward to each year, indeed!  I wish Vegan MoFo was EVERY MONTH but I know it takes a LOT of organization and I want to THANK the organizers of this annual event.  Learn more at VeganMoFo.com.

This year the organizers have developed prompts to get us going and I may post loosely based on these prompts but will be participating most days regardless.  I may miss a weekend day from time to time but will do my best in the meantime!


Before I get to my first post I wanted to let everyone know that I have started a BlogRoll for people who comment on my blog.  The direct URL for this BlogRoll is located HERE.  Or you can see the logo in this post on my sidebar, too!

My goal is to network more and more with MoFo-ers each and every day and try and have lasting relationships year-round!

Today's Prompt is...

Rise & Shine!  It's MoFo Time!  Tell us about your breakfast!

Well, here it is!  It's a "Handful Of" Smoothie!

What I mean by that is I literally threw in a handful of all of the following to make this...Cashews, Blackberries, Blueberries, Strawberries, Raspberries...and added just enough Cashew Milk to cover it and blended!  It's pretty yummy and I hope to make a Raw Vegan Ice Cream using these ingredients soon, too!

As a mid-morning snack...

I will be having a few (or more) of these dried apple slices!

For course I am drinking various teas - like I normally do - throughout the day, too!

Lunch is yet to be determined but I'm guessing it will be a large salad because I made some pretty awesome tangy ranch dressing last night and it seemed to hit the spot with the thrown together salad I had last night for dinner, too!
