Before I get to the 2 items I didn't NEED but bought anyways...I thought I would show you my BRUNCH today! It's Sweet Earth's Kyoto Stir Fry Bowl. It's something I picked up about a month ago while on our regional shopping spree. I found it at the Erie Target. It had some heat to it and I liked it! I don't eat enough Edamame mostly because it's not often readily available where I live. As are many things, I suppose. But I still make do with what I have. Don't we all?
On to the FIRST of TWO items I didn't NEED but bought anyways! I found this 'bad boy' at my local Tops! I was just strolling thru the aisles and saw it. I swear the sky opened up and the angels sang! Garlic Tahini? All in one tub? AWESOME! I know I am probably LATE TO THE PARTY here and this may not be a NEW item or a NEW brand to many/all of you but it is me! I haven't seen the Sesame King brand here so I was pretty stoked!
Come to find out they have other FLAVORS of Tahini, too! They have Light Roast, Roasted, Honey, Chocolate, Garlic, Olive Oil, Cajun, and Tomato Basil! Out of all of them I have to say I am the most excited about the Tomato Basil and the Cajun! Other than the Garlic I bought, of course! Too bad my local Tops only sells the Garlic. I totally understand why they only carry that one, tho! It's a new product and an alternative product and not many people around here would be looking for it in an aisle!
The other item I bought this past week but didn't really NEED to was Mikoyo's Sundried Tomato Garlic! I was in Erie on Saturday and stopped by the Whole Foods Co-Op and found it on sale again! $2 off! How could I resist!? So this was $7.99 and the Tahini was $4.99. That's already $13 for those 2 items so eventho I won't be doing that much more shopping this week I did splurge a bit on those TWO items! I realized I haven't shared with you pics from the meal I had with my parents/sister over the weekend - hopefully tomorrow!
But for today I will leave you with another furkid foto! Here is Paco and Cricket from the other night. I think Paco was just as surprised as I was that Cricket took time out of her busy schedule to plop right down next to him and take a nap on the sofa! It's nearly spring and that means that Paco's eyes will be watery and staining. It's time for me to do a natural and gentle pet friendly eye wash SOON! It will go on the fur NOT the eye, of course!

Tabouli Mediterranean Snack Bar & Cafe
I will have multiple posts today so be sure to check back! First up I'm VERY EXCITED to tell you that there is a NEW restaurant in town! Yup! In the small town where I live there is a new eating establishment that opened on Monday called Tabouli. It's a Mediterranean Snack Bar and Cafe. They have MANY vegetarian and vegan options available and they are clearly marked on their menu as such! None of my co-workers have ever had Mediterranean Food (other than Greek Mediterranean Food, that is) so I brought a few things back for them to try!
In the first photo above is their Falafel made with Chickpeas, Onions, Parsley, and seasoning. Some of you know I'm a HUGE fan of Falafel so of course I adored this! I will note...their Tahini Sauce is made with Yogurt so I offered that to a co-worker as it isn't vegan. Their Hummus is the vegan option for this. Both are shown.
The other photo is of their Lentil Soup. It's a thinner soup and the Lentils appeared to be ground and not whole. The caramelized onions kicked the flavor up a notch! YUM!
I know I will be ordering a LOT from Tabouli so be on the look out for more posts! It's a block from where I work so I'm sure they will get to know me real well - and I - them!

Colorful Weekend, Mason Jar Set, Red Pepper Tahini Dressing & Soup Recipes!
This past weekend was a CRAZY BUSY one...but in a good way! This is my
2nd post for today - so - be sure to scroll down for the other one as to
why half of the weekend was NUTS.
This post, however, will include some other things from the weekend. As well as some items from last week - when I was under the weather.
First
off - this selfie I took. I'm trying to take some more of them because
no one takes photos of me and I'm always behind the photo while taking
pics of groups, events, travel, and food. I'm not very good at selfies
but I'm trying!
The
main reason for this one is to show off one of my new shirts I got this
past weekend. Yup! I was able to go on a bit of a shopping spree for
clothes, specifically. I don't often do that but I was PAST Due for
some clothes! I've been pitching a lot of them but I will wear stuff
until I literally am not able to any longer. That and so many more of
the clothes I had are 3 sizes too big!
One
of the items I scored at Sam's Club a little over a week ago was this 6
piece Mason Jar Set. I couldn't resist...it was calling to me! You
get all 6 glass mugs with handles, lids, straws, and burlap holder as
you see here - but - it also comes with 6 additional straws (photo
below). These are heavy-duty reusable plastic straws.
Online this set is selling for $16.49, I think...but...for some reason I think I only paid $14 and some change for it. I REALLY Love the way it looks...so bright and fun! I can't wait to fill them with juices and smoothies! Here's a pic of the orange one up close! They are just too cute, aren't they!?
In food related news...
I made some home made raw vegan dressing and it turned out AWESOME!
And it only uses 3 ingredients! Here's a quick recipe for you!
2 Sweet Red Bell Peppers
1/4 C Lemon Juice
3 T Tahini
I
had a large salad last night with the dressing on it. A few cups of
various lettuces, shredded carrots, red cabbage, Green Peppers, Y.E.L.O.
Tomatoes, and Hemp Seeds!
While I was eating it all I could think about was how flavorful it was and then I wondered if I could make a soup out of it. So I did.
After using more than half of it as a dressing I then made a soup by adding the following...
2 T Minced Sun Dried Tomatoes & Garlic
1/4 C Basil
I have to say I was totally impressed with this flavor, too!
The addition of the garlic REALLY pumped it up! The Sun Dried Tomatoes didn't hurt either. It makes me want to do more raw(ish) soups VERY soon!

Lots of Vegan Foods - Hobo's, Bean Dishes, Sauces, Mac N Cheese, Snacks, Side Dishes, and Experiments!
I've sort of been a blogging fool today! So keep scrolling down! I have 4 posts today! This post is specifically a FOOD Post, tho! This first one I did a while back and did some greens up and on top of that did black beans and black-eye-peas with some onions and red peppers. On top - you see that awesome sauce? I have to say I LOVED this sauce and will be making it often! It has the following in it:
1/2 C Tahini, 1/3 C Hot Sauce, 1/4 C Water, 2 heaping tablespoons of Nutritional Yeast, 1 Clove Garlic.
It was totally yummy! Spicy but cheesy! YUM!
On the 4th of July my husband and I just stayed home - which was rare - but nice! He's been wanting to do some grilling but it's been so rainy here this season that it has been hard. We did get a little bit in that day, tho! He is a fan of what he calls "Ho Bo's" and I have always done a Veggie version with a veggie burger but I wanted to try it with Tofu! That is what I did here! This is the BEFORE photo. It has Potatoes, Mixed Veggies - Corn, Carrots, Green Beans, Onion, Tofu, Cabbage, Earth Balance, Wildtree Rancher Steak Rub. I have to say I was very excited with the way it turned out!
Here is the AFTER photo! I do like "crispy" and "crunchy" edges on mine! YUM! The one side of the tofu turned out a bit better than the other but the flavor was just what I hoped it would be! I'm looking forward to doing it again soon!
I think I forgot to take a photo of the Brown Rice Side Dish I did that day! Oops! It was basically Brown Rice with Carrots and Onions and I used a now discontinued Wildtree Product called Asian Potsticker, I believe.
I always look for Vegan Mac and Cheese ideas and I have to say this next one may be the best yet! I did tweak it quite a bit from the original recipe I found online!
This has the following in it:
2 T Earth Balance
1/2 T Dijon Mustard
1/2 T Yellow Mustard
1/2 T Hot Sauce
2 T Flour (I used Bob's Red Mills All Purpose)
3 T Nutritional Yeast
1/2 C Almond Milk (or more to taste/consistency)
2 slices of Toffuti Mozarella Vegan Cheese Slices
Small handful of Daiya Cheddar Shreds
Handful of Rice Crumbs
This next photo I have done a few variations of before but thought it was still a tasty mention. Pecans with Hemp Seeds/Hemp Hearts. All I did was a little Maple Syrup with Cinnamon and Nutmeg and Raw Cane Sugar.
Another Quick and Easy dish I did this past weekend was a chickpea side. Many of you know how I LOVE chickpeas! For this one here are the ingredients:
3 T Apple Cider Vinegar
1 T Bragg's Liquid Aminos
1 tea Dijon Mustard
1 T Tahini
3 T Water
2 C Chickpeas
1/4 C Parsley
Splash of Balsamic
I also used up the rest of the lentils I had on hand over the weekend! I must get more! Especially after making this with it! It was so GOOD!

1 Stalk Celery
2 T Minced Parsley
2 T Lemon Juice
1 tea Miso
1/4 C Roasted Sunflower Seeds
It was totally YUMMY!
For this next dish - I purely did it for experimental reasons as I am not as 'seasoned' with Wheat Berries as some people are. Here's what's in this one...
1 C Wild Rice (cooked)
1/2 C Wheat Berries (cooked)
Grapeseed Oil as needed (I used Jalapeno for a kick!)
1 Onion
2 Carrots
2 T various Herbs (I used Wildtree's Opa! Seasoning)
1 Clove Garlic
1 tea Dijon Mustard
1 T Rice Wine Vinegar
About 10-ounces of Mushrooms
This turned out pretty good, too! I like to call it Chewy Wheat Berries and Rice. I planned for a good portion for my lunch today but I also saved a little bit to try yet another experiment on! Veggie Burgers! I added Bread Crumbs to them and formed a patty and did them on stove top. The flavor was nice but it still broke apart a bit. Next time I will take Opal's Advice and BAKE them!

Chocolate Chia Pudding OR Triple Thick Vegan Milk Shake, Tahini Veggie Stir Fry, Black Bean & Corn Salad, Tomato Cucumber Salad, Jalapeno Italian Dressing, Jalapeno Corn, Farmers Markets, Superman!
I posted a little bit about Chia Seeds last week and I had some questions about them so I will do a little break-down for you! Because...guess what!? I have another Chia Seed Recipe! Chia Seeds are a concentrated food containing healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium. They have a mild and nutty flavor and they can be added to just about anything. When you mix them with water - they gel. You do want to make sure you drink a lot of water when you consume Chia as they do 'take' water from your system as you digest them. Some people say they curb your hunger. Some people say they are good for digestion and weight loss. Others just really love the nutritional benefits of them!
As you can see here, I did some Chocolate Chia Pudding! Sometimes I am not really in the mood for the texture of whole/gelled Chia - it's much like Tapioca or some have compared the texture to caviar. What I did for this Chocolate Chia Pudding is I used about 4 to 6 T of gelled Chia Seeds and put them in my Ninja Blender and flooded them with Chocolate Soy Milk. This made it very thick. SO you could say it's a Pudding or even a Triple Thick Milk Shake.
Friday Night I wanted something QUICK and decided to do this Veggie Stir Fry. I decided to cover it in a Tahini Sauce. It's a little different than the last few I have done and applied it right to the frying pan while I was cooking it. I used 2 to 3 T of Tahini, 2 T of Bragg's Liquid Amino's, Splash of Grapeseed Oil, 2 T Minced Garlic, Red Pepper Flakes to taste, I did add a little water, as well. This turned out pretty good! I think I added a little Lemon Juice towards the end to taste, too!
Yesterday I made some Vegan Sides for a Picnic type thing my hubby's family had. This was one of them! Black Bean and Corn Salad. It's quick and easy, too! I used about 8 ounces of sweet corn, 15-ounces of Black Beans, 1/4 C Wildtree Balsamic Dipping Oil, 1/2 teaspoon of Organic Raw Cane Sugar from Wholesome Sweeteners, 3 T Cilantro, and Chili Powder to taste. It seemed to be a hit! And I got a little crazy with the Vinegar's this weekend apparently! The Vinegar Fun Continues...check it out...
For this Tomato, Cucumber, Onion Salad I used 3 Tablespoons of Rice Vinegar, 1 Tablespoon of Grapeseed Oil, 1 teaspoon of Agave Nectar, Black Pepper to taste, 1 Cucumber, 2 Tomatoes, 1 Vidalia Onion, and 1 teaspoon of Wildtree's Italian Seasoning Blend. Right at the end I added a little of the Balsamic Vinegar to kick it up a notch! This was also a hit! There was not much left but what was left of both of these dishes I mixed together and ate for lunch today.
Many of you know I am NOT afraid of spicy foods. I wanted to do an Italian Type Dressing but a spicier one! So what I did with this one is quite simple!I used:
1/3 C of Coconut Vinegar (Coconut's Secret)
3 T Water
2 T Wildtree's Italian Seasoning/Dressing Mix
2/3 C Wildtree's Jalapeno Grapeseed Oil
This was DARN tasty and just enough Jalapeno to get me excited! I had a few ideas right away but have been thinking about other ways to use this prepared dressing ever since I mixed it together!
Here is one thing I did with this dressing! I used it as a marinade! It was VERY tasty! I added a little bit of Nutritional Yeast to it as well to give it a little cheesy flavor and to thicken it up a bit. I ate a small dish - just to see what it tasted like - after eating a bit of it - I knew I wanted to save the rest to use on salads this week!This past weekend I was able to get to our local Farmers Market and I bought Collards, Green Garlic, and Pak Choi. I'm super excite to 'play' with those this week! I also visited one of our local produce stands that does not participate in the Farmers Market as they have full time seasonal hours. There - I bought a few others things. Later Saturday I went to a Produce Store in Lakewood and was able to pick up some great deals on fresh produce as well. I was especially impressed with the Watermelons at $1.99...they were so flavorful!
And we FINALLY saw the NEW Superman Movie! Man of Steel! LOVED it! What did you do this weekend!? Hope you had a great one! I have a feeling this week is going to be another CRAZY one! Game On!

Several Recipes & Foods From The Weekend!
I know I am going a little crazy with my posts, today, but I had an awesome weekend and wanted to share with you all! This is the 3rd and last of my posts for today so be sure to scroll down and see the other two! This post is specifically about all of the fun foods I made this weekend!
I'm starting off with Jicama Radish Slaw
I have been on a Jicama kick lately and I started off by munching on it stand-alone but then decided to get a bit more creative with it. Here's what I did with this Raw Vegan Dish!
1/2 Pound of Jicama, Julienned
2 Radishes, Julienned
1/4 C Cilantro
3 T Lemon Juice
Seriously! That's all! Totally simple! Raw! Awesomely Flavorful! This is one of my favorite attempts in a while! I will certainly do this again and soon!
I told Christine I was bound and determined to try a dressing using Jicama so here is what I did and I am pretty pleased with it so far!
1 C Jicama, Cubed
1/2 Lime, Peeled
1 Clementine, Peeled
Pinch of Ginger Powder
1 C of Water
1+ T Balsamic Vinegar
All in my Ninja! YUM!
Another thing I did this weekend was a dip! Actually I did a few of them - but this one is an Avocado Tahini Dip...
1 Handful of Spinach
1 Avocado
1/3 C Tahini
1 T Lemon Juice
1/2 tea Cumin
Water to Consistency
This was amazing! It was Tahini-Rich but I was also able to "Get My Greens On" a little bit! I could have probably added more Cumin or maybe even some Red Pepper Flakes to spice it up more, too!
For another side dish or even a snack I did these! I have been wanting to try them for a while and they turned out pretty awesome so I will have to try them again and SOON! They are Sugar & Spice Pan-Fried Chickpeas!
1 Can of Chickpeas
1 T Wildtree's Butter Flavored Grapeseed Oil (It's Vegan -Flavor comes from a coconut!)
1 tea Wildtree Hearty Oatmeal Mix: Sugar & Spice Add-In
1 tea Agave
Yesterday I found a package of Fantastic Foods Tofu Burger Mix in my Pantry and figured I should probably use it! It's been there a while! But I really didn't want to do a Veggie Burger so what I did was Tofu Loaf! I have been wanting to try one of these and figured I had the time to try one before my husband got home from a weekend in Pittsburgh and Erie with his mom and brother!
Friday they went to the Pittsburgh Penguins Game and then Saturday they went to visit my mother-in-law's husband who is currently in the hospital out there.
Anyways...Here's what's in this Tofu Loaf:

1 T Wildtree Butter Flavored Grapeseed Oil
1 Onion
2 T Minced Garlic
8-ounces of Mushrooms
2 Carrots
1 Pound of Extra Firm Tofu
1 Package of Fantastic Tofu Murger Mix
1 and a Half C cooked Black Rice
1 Cup Chopped Cashews
(added half way thru baking)
Just enough to top...
Vegan Bread Crumbs
Tomato Soup
Daiya Pepper Jack Vegan Cheese
Vegan Parmesan Cheese
I have to say - this surprised me - I had two pieces yesterday and will have some of the leftovers tonight! It's jam-packed with protein, fiber, calcium, and much more stuff! Pretty Good! I might add some Black Beans next time, too!
AND...finally...
Baba Ghanoush! Yup! I FINALLY made it for myself! I found a nice sized jar of Roasted Pureed Eggplant at Big Lots a while back and wanted to try it in Baba Ghanoush! I wasn't sure how much to use so I used about half the jar which was about 1 Cup!
Here's that Recipe!
1 C Roasted/Pureed Eggplant
2 T Minced Garlic
3 T Tahini
3 T Lemon Juice
For some reason I thought it was more involved than this! I started with a recipe online and tweaked a bit based on the Puree. It was fantastic!

This was amazing! It was Tahini-Rich but I was also able to "Get My Greens On" a little bit! I could have probably added more Cumin or maybe even some Red Pepper Flakes to spice it up more, too!
For another side dish or even a snack I did these! I have been wanting to try them for a while and they turned out pretty awesome so I will have to try them again and SOON! They are Sugar & Spice Pan-Fried Chickpeas!
1 Can of Chickpeas
1 T Wildtree's Butter Flavored Grapeseed Oil (It's Vegan -Flavor comes from a coconut!)
1 tea Wildtree Hearty Oatmeal Mix: Sugar & Spice Add-In
1 tea Agave
Yesterday I found a package of Fantastic Foods Tofu Burger Mix in my Pantry and figured I should probably use it! It's been there a while! But I really didn't want to do a Veggie Burger so what I did was Tofu Loaf! I have been wanting to try one of these and figured I had the time to try one before my husband got home from a weekend in Pittsburgh and Erie with his mom and brother!
Friday they went to the Pittsburgh Penguins Game and then Saturday they went to visit my mother-in-law's husband who is currently in the hospital out there.
Anyways...Here's what's in this Tofu Loaf:

1 T Wildtree Butter Flavored Grapeseed Oil
1 Onion
2 T Minced Garlic
8-ounces of Mushrooms
2 Carrots
1 Pound of Extra Firm Tofu
1 Package of Fantastic Tofu Murger Mix
1 and a Half C cooked Black Rice
1 Cup Chopped Cashews
(added half way thru baking)
Just enough to top...
Vegan Bread Crumbs
Tomato Soup
Daiya Pepper Jack Vegan Cheese
Vegan Parmesan Cheese
I have to say - this surprised me - I had two pieces yesterday and will have some of the leftovers tonight! It's jam-packed with protein, fiber, calcium, and much more stuff! Pretty Good! I might add some Black Beans next time, too! AND...finally...
Baba Ghanoush! Yup! I FINALLY made it for myself! I found a nice sized jar of Roasted Pureed Eggplant at Big Lots a while back and wanted to try it in Baba Ghanoush! I wasn't sure how much to use so I used about half the jar which was about 1 Cup!
Here's that Recipe!
1 C Roasted/Pureed Eggplant
2 T Minced Garlic
3 T Tahini
3 T Lemon Juice
For some reason I thought it was more involved than this! I started with a recipe online and tweaked a bit based on the Puree. It was fantastic!

Black Bean Hummus
It's been a while since my last hummus post and I could seriously eat a form of Hummus EVERY DAY!
Today...Black Bean Hummus!
2 C or 1 Can of Black Beans
1 T Grapeseed Oil (I'm going to make another batch with Jalapeno Grapeseed SOON!)
2 T Tahini
3 Cloves Garlic
1/2 T Cumin
2 T Lime Juice (or lemon if you prefer)
Pinch of Paprika, Sea Salt, Cayenne Pepper
I also saw someone use Banana Pepper Rings to top it off! I LOVE this idea and might try that soon, too!

Top 20 Ingredients I Can't Live Without!
Alicia Silverstone over at The Kind Life posted about the 20 ingredients she can’t live without. As did Cadry at Cadry's Kitchen. So I decided to follow suit! Here are my TOP 20 Ingredients in random order.
TEA - As many of you know I drink A LOT of tea. All day...all night...I have even started using it in dishes! All sorts of tea...Black, Green, White, Yellow, fruit and herbal tisane's, Oolongs, Pu-erh, Blends, Purple, Guayusa, Rooibos, Honeybush...the list goes on and on!
CHICK PEAS & BLACK BEANS - I was going to list these separate but came up with too many items I MUST HAVE in my kitchen, apparently! The older I get the more I LOVE Chickpeas. They are so versatile! I would have also put HUMMUS on the list but it's not just ONE Ingredient it's a FOOD, a dish, a delicacy, really. Okay, okay...you can tell I LOVE hummus! Well, Chickpeas are one of the ingredients so it works, right?
GRAPESEED OIL - Why GSO? I think this sums it up nicely! I LOVE IT! If you want to order some let me know!! I can have it shipped directly to you!
LEAFY GREENS - I know this is more than ONE but I couldn't resist! There are so many Leafy Greens to choose from and they ALL have their benefits!
CASHEWS - And other nuts, really. I'm very fortunate to NOT have allergies to Nuts! I don't think I would be able to deal with that intolerance, to be honest! I'm finding Cashews are very versatile as well and now that I'm NOT doing dairy there are many things I can do with them as a substitute.
NUTRITIONAL YEAST - I have used it for YEARS - but have been using it on a weekly - sometimes daily basis these days! Along the same lines would be HEMP HEARTS and CHIA SEEDS, I guess, too! For Digestion Issues/Benefits as well as a protein option.
VARIETY of RICES - Again, I am a REBEL, here, and noting more than one but I really can't help it! Just when I think I know which RICE is my favorite I discover new ones...like Medleys from Bob's Red Mills as well as FORBIDDEN RICE, lately, too!
QUINOA - Quinoa is in a category all of it's own for me! I have been eating it for years but continue to be amazed by it! I LOVE the nutritional benefits as well as digestion support but also the texture and flavor and the ability to make it MORPH!
TOMATOES - Any kind, really. I could go on and on about THE TOMATO but I will let it speak for itself! YUM!
BALSAMIC VINEGAR - Yes! BALSAMIC VINEGAR...Wildtree Brand, specifically. And I'm not just saying that because I sell it! The flavor CANNOT BE BEAT! Plus it has the Grapeseed Oil Base, too!
TAHINI - I thought it was just for HUMMUS but it's good for SO MUCH MORE!!! I'm using lately in Cheese and Cream Alternatives, too!
GARLIC - Need I say more? I just LOVE it! I can't get enough of it! I'd put it on cereal if it were allowed. Okay...that might be a stretch...but...you know what I mean, right!?
ONIONS - They give flavor to EVERYTHING and they make the perfect base for many things!
LEMONS & LEMON JUICE - I almost over looked this one. It's one of those things I really use a lot of but just USE it and tend to forget about it BUT if I run out...there is HELL TO PAY, Mister!
CORN - It's so sweet, It's so cute, It's SO GOOD! I have been using it more and more to kick certain recipes up a notch as well as add to leftovers, wraps, salads, etc. So simple - yet - SO effective!
COLORFUL BELL PEPPERS - LOVE them! In every way! I find myself adding them to EVERYTHING and then some! The sweeter the better!
SPROUTS - When I was a toddler they used to be one of my 3 favorite foods (next to Dried Apricots and Lima Beans - which SHOULD also play a part in this list somewhere...there...they just did!) and I lost touch with Sprouts for a while but have been having FUN Sprouting my own Sprouts at home on and off again for a couple of years!
CARROTS & CELERY - Mostly because I can't have one without the other - and because they are right up the same alley as Onions and Garlic and Corn!
ALMOND MILK - I prefer Almond Milk to any of the other Milk Alternatives. It's my default, really.
AVOCADOS - I wish I could have one everyday but they are really expensive here but when they are on sale! I'm ALL OVER THAT! Nom.Nom.Nom.

What I did for the 'cheesy sauce' was the following...
1 1/4 C Soy Milk
1/2 C Nutritional Yeast
2-3 teas Cornstarch
Splash of Lemon Juice
1 teas Wildtree Onion & Chive Blend
Squirt of Mustard
Pinch Cayenne Pepper
1 T Tahini
Wildtree Lemon Pepper to Taste
1/2 C Nutritional Yeast
2-3 teas Cornstarch
Splash of Lemon Juice

Something like "Mock Tuno Salad"
The other night I followed a recipe from The 4 Ingredient Vegan and it was pretty horrible. The sauce was made of Vegan Mayo and Tahini. I didn't want to give-up on it so here is what I did to tweak it:

For the sauce I used Tahini, Vegan Mayo, Almond Milk and Water.
For the additions to the sauce for texture I used chopped/marinated Artichoke Hearts, Tomatoes, a little bit of Medium-Hot Salsa, and Wildtree California Garlic Pepper.
With the exception of the Hot Salsa this was reminiscent of a Mock Tuno Pasta Salad. It wasn't bad! With the addition of the kicky salsa it really did give it a nice punch. This is pretty good warm but even better cold!
Pretty tasty ending for something that started out pretty awful! LOL

Currently In The Oven: Two "Cheese" Baked Cauliflower
I told you I was going to use that new-to-me-vegan-cheese!
I tweaked a recipe I found on VegWeb and did this!
Almost a full head of cauliflower
2 T Tahini
2 T Mustard
1 T Grapeseed Oil

Raw Zucchini Hummus
This is also from Philip's Book - mentioned below - but I left the skin on. I must say I'm not as jazzed about this one but will be experimenting with it more. I think if it were IN something...maybe as a topping on a Sandwich it might work but something doesn't really jive stand-alone for me, I guess.
Again, I tweaked it a bit - so it could totally be something on my part and not the original recipe!
I used Black Sesame Seeds, Grapeseed Oil, Tahini, Sea Salt, Lemon Juice, Zucchini, Water, Garlic
I also found that my mini-grinder decided to bite the dust last night so I have to go find another one.
Again, I tweaked it a bit - so it could totally be something on my part and not the original recipe!
I used Black Sesame Seeds, Grapeseed Oil, Tahini, Sea Salt, Lemon Juice, Zucchini, Water, Garlic
I also found that my mini-grinder decided to bite the dust last night so I have to go find another one.
