Wait...that doesn't look like an omelet! Well, it was supposed to be...it didn't turn out that way. But I didn't give up on it. I morphed it into something else and it ended up being edible. I think my problem was that I wasn't patient enough. Since I goofed on this recipe I won't post it here but I will say that it ended up being pretty tasty and I made two meals out of it. I was originally going for an omelet but it ended up being a non-tofu Scramble, instead, I guess. With a little more liquid it was sort of like broccoli and cheese soup but with spinach, cauliflower, and carrots instead of broccoli.
Here's the first meal I had with it. I just did plan white rice and added 'cheese' sauce to it. It was a packaged powder that I doctored up as well.
One of these days I will gain enough courage to try a vegan omelet again but it might be a while.
I did use the vegg in this as well as coconut flour. That could have been the issue...the coconut flour...I haven't gotten the substitute ratios down yet. I wanted to use Almond flour but I didn't have any.
Eventho there is spinach in this dish I wanted to 'up' the greens count so I sprinkled a bit of Garden of Life's Perfect Food. One of my favorite things about the GoL products you can add it to anything for a little extra boost...this one contains over 8000mg of greens per serving.
Eventho this didn't turn out like I hoped it ended up being a tasty dish - with leftovers! I have lots more to share and will have multiple posts today so stay tuned!

Green "Veggs" for Christmas Morning
It's a tradition at my parents house to do a Christmas Brunch.
While my other family members share a 20-some egg omelet - I opt for other vegan foods.
This year - one of the things I did was this Vegan Scramble. Following the festive tone with the "green" of the holidays I used not only Spinach but some of Garden of Life's Perfect Food in this in addition to The Vegg. It turned out pretty good!
Next time I think I will add some Salsa to it, tho! I really like a kick in my Tofu Scrambles.
So...without further a-do...here is what's in this Scramble...
1/2 block of Extra Firm Tofu
1/4 Green Pepper
1/4 Onion
1 C Spinach
Equiv of 2 to 3 eggs using The Vegg
1 tea or less of Wildtree's Garlic Dipping Oil (Grapeseed Oil Based)
1 tea GoL's Perfect Food® RAW Wheat Grass
This turned out pretty good. It took a bit longer than I anticipated to "cook" the Vegg in with the Tofu to my liking but it was worth the wait! I don't like "eggs" that are runny I prefer them "done" with a bit of " light brown to them - I guess you could say! With a little patience - they turned out good - and I hope to do another scramble using The Vegg again in the future!

EcoJarz, The Vegg, Today's Bento Box, 2 Vegan Recipes
There's so much happening in my world and I'm so excited to blog about it! I received a few items in the mail that I will be playing with, testing out, and blogging about soon...but...here is a sneak peak of one of them! EcoJarz! Woot! Can't wait! There are all sorts of goodies in this box that I received today and they go hand-in-hand with many of my Mason Jars! Another one I received Monday was a package from The Vegg. I've used Vegg in the past and blogged about it a few times but I now that I have more in my pantry I will surely keep you up to date with my adventures! Including one TODAY listed later in this post! 
Better Yet...I also received their Vegg Cook Book! I'm so excited! (Later today I will be editing this post to include the Recipe)
I made Quinoa Bites or little Vegan Quinoa Quiches, almost!
Another photo I thought I would share with you is my Dinner Plate from last night! I had a "DUH" Moment thinking I had a head of lettuce in the frig. Hubby grabbed a head of Cabbage instead so once I realized that I switched my plan of attack! I skipped the planned Salad and came up with this instead! I did have a HUGE bag of washed Kale on hand and steamed a few cups. I didn't let the Lemon Tahini Dressing go to waste that I had already prepared! I drizzled it over top and it was just as good warm! You'll also see some mixed veggies including cauliflower, broccoli, carrots, etc...topped with Nutritional Yeast Flakes. And some baked fries!
Here's a photo of the dressing/sauce I made after blending it in my Ninja! It's a Sweeter Lemon Tahini Dressing and/or Sauce. Here's what's in it:
1/4 C Tahini
1/4 C Water
1 tea Basil Pesto Grapeseed Oil
2 tea Apple Cider Vinegar
Sprinkle of Pink Himalayan Sea Salt
2 T Parsley
3 Drops of NuNaturals Lemon Stevia
1 tea GoL Wheat Grass Perfect Food
Next...I want to THANK the Bento Box Blogging Community for such a WARM WELCOME yesterday! It was AMAZING! I responded to all of the comments you left for me and appreciate the encouragement!
Here's my Bento Box for today! This was using the Salad Kit I got but I didn't use it for salad! I do, however, have a Garlic Sauce in the green container for the Quinoa bites. I have the rest of my homemade Cheesy Protein Crackers and some Dark Chocolate Nuggets that has Ginger in it!
This is the bottom layer! I put some Kale on the bottom and added a handful or two of Walnuts throughout as well as the Quinoa Bites. It was very filling! I was unable to eat all of the Walnuts and was satisfied for the rest of the day!
I used the Vegg in the Quinoa Bites and I really enjoyed them! They were tasty! I also added some hot sauce to the mix but they only had a small kick to them...if you are craving even HOTTER flavor...just add more to the mix before baking! I put the mix into a muffin pan.
Here's what the Quinoa Bites are made out of:
1.5 C Cooked Quinoa
Vegg (Equiv. of 2 to 3 Yolks = followed directions on package)
1 T Minced Garlic
1 T Cilantro
1 T Hot Sauce (Next Time I will add more)
1 T Agave
1/2 C Vegan Bread Crumbs
2 X 2 Inch Sliver of Daiya Havarti Vegan Cheese, diced small

Vegan MoFo ~ Vegan Fried Green Tomatoes & Sauce, Sweet & Spicy Vegg Fried Rice, Chai Spices, & Furkids
Happy Monday! I will have multiple posts today as it was a VERY busy weekend but quite fun as well! Here is the first of a few posts!
Friday Night after work I decided to go get some Avocados at Aldi's (the best place to buy Avocado where I live - the freshest and the best price!) My sister wanted me to make Avocado Hummus for our Wildtree Event on Saturday. So I did just that. I also bought some white rice. I didn't have any at home. I usually use other rices - other than white rice - but once and a while I will use it - but didn't have any in my stash! So...now I do!
After buying just those three items I decided to go to The Hatch Patch - a local produce stand here in town. I ended up buying 2 nice sized Green Tomatoes! I have to admit I didn't grow up on Green Tomatoes! My parents were into various Red Tomatoes but not green. My husband LOVES Green Tomatoes. He grew up with them. The funniest part is - Hubby wasn't home most of this weekend and I ended up making these for myself! I think I have only ever had Fried Green Tomatoes maybe 2 or 3 times in my life. I guess I was feeling adventurous!
Anyhow...I made these Vegan Fried Green Tomatoes! Here is what I used to make them!
2 Green Tomatoes
Vegg - the equiv of 4 to 6 'eggs'
Vegan Bread Crumbs
About 4 T Wildtree Tzatziki Seasoning/Blend
Wildtree "Tuscan" Grapeseed Dipping Oil for pan frying
Many of you know I am a 'sauce' person so I wanted something to drizzle over top and/or use for dipping so I made this for them and it turned out pretty good - however - it made WAY too much - so I won't put the measurements here but will put the ingredients incase you would like to tinker with it a bit.
I used...
Vegan Mayo (like Veganese)
Frank's Hot Suace (or any other Hot Sauce)
Parsley
Since I used slices of Green Tomatoes for the Fried Green Tomatoes I had some 'tops' left and didn't want them to go to waste so I decided to do a "leftovers" type of Vegg Fried Rice again.
I did try and use the left over "Vegg" mixture and try and 'fluff it up' to mock 'scrambled eggs' but it didn't work so hot.
So what I did was throw in the rest of the Green Tomatoes - diced - in with a half of green pepper, a half of a Scallion, some white Rice, and 2 Table spoons of Tomatoes soaked in Green Chilies.
I then pan-fried until gently brown. It turned out really good and I liked the sweet of the tomatoes and the spicy of the tomato/chili combo.
Speaking of SPICY...I received some Chico Chai Products I will be sampling and reviewing over at Sororitea Sisters at some point. Here is a bit of their Original Chai. I just really liked how it looked in the picture so I thought I would share it with you!
I've grown to LOVE Chai! The spices are quite good for you and have healing and in some cause detoxifying properties. But I will get into that another time.
I drink various types of tea thru-out the day!
It's been a while since I posted a Furkid Photo. Friday Night the 'kids' were sacked-out. Paco and Suzie snuggled up with each other on my lap on the sofa.
Prior to taking this photo I cleaned Paco's eyes with Tear Wipes. I'm trying to use the rest of the wipes I have and will NOT be buying them again. I don't care for them. Yes, they are gentle, and Paco doesn't seem to mind them but I think there is a better way and a better product out there. I don't think the ones I am using are working very well. There is a product I have had my eye on over at my local herb store - I am not sure on the name but I am thinking I might try that next time. I believe it has a bit of Neem Oil in it.
I have lots more to share today so please visit back later as I will probably have another post or two up by then with more happenings from the weekend! In the meantime...let me know how your weekend was!

Vegan MoFo ~ Vegg Fried Rice
For today's Vegan MoFo Post I have to give a little shout-out to Suituapui! This is my very first attempt at Vegg Fried Rice (or a Vegan Egg Fried Rice).Yes, it's true I tried using Vegg for this. It worked pretty good but I will be tweaking it a bit. I used the equiv of 2 to 3 'eggs' and next time I might use double that. I also might whisk by hand (eventho it suggests NOT to do it that way on the package) to see about getting more of that 'yellow yolk color'. Another way to go would be to use Tofu...maybe in addition or soak it in the "Vegg" even.
Regardless the aroma was 'right on' and the taste was just about there, too!Here's what I put in this dish:
About 2 C of Cooked Brown Basmati Rice
1 T Wildtree Chili Grapeseed Oil (a now discontinued product) - OR use a bit of oil & Red Pepper Flakes
1 C Mixed Veggies (I used Carrots and Peas)
1/2 Scallion (or onion or green onions)
1 tea Vegg PLUS 1/4 C Water (next time I will use double this)
In the second photo you can see the "before" picture with the Vegg prior to stirring. I'm still a beginner with the "Vegg" but I am enjoying the learning process!

Vegg Egg TESTS - Vegan Zuchini Bites & French Toast
Sorry it's been pretty quiet on the website this week so far but I assure you REAL LIFE has been anything BUT quiet. I would explain more of what has been going on but I would rather focus on some of my food adventures over the past week instead. A while back I purchased The Vegg - it's The World's First Vegan Egg Yolk. Sure, I wasn't sure how this would work but with what little I have done with it so far - I am pleasantly surprised with this product! I decided to do French Toast with it. The instructions are right on the package. 4 teaspoons of the 'powder' with 1 and a half cups of water and 1 and a half cups of milk alternative. I used Almond Milk. Almond Milk is my go-to or 'default' milk of choice. I put these ingredients in my Ninja and let it rip for 15 seconds. It made a HUGE batch of egg-like liquid for dunking bread into! I ended up doing at least 7 large slices and there was enough liquid left to fill a travel mug.
I added a little bit of Wildtree's Hearty Oatmeal Mix-In to the 'batter' and it turned out pretty good! I had the perfect bread, too, that was made by a small local grocery store!
Here are two of the pieces that I made! I also did another one that I tried with Wholesome Sweeteners Agave Syrups! I used the Cinnamon Flavor and it was AMAZING!
I will absolutely be doing this again!
The most interesting part of this - for me - was that when 'activated' by the liquid this mixture ACTUALLY smelled like EGGS! Almost like Hard Boiled Eggs, for example.
My attempts with this product didn't stop there! I ended up trying Zucchini Bites with it as well! I used 1 Zucchini and used my Spiralizer and then cut the strands. I used a little bit of The Vegg and also added 1 onion, chopped in larger pieces, and bread crumbs.
I baked them in the oven and to some of them I added a little bit of Daiya Shreds to them. I noticed they were NOT doing to be done in the time I had hoped so I took them out - rolled them in tighter 'balls' and added more bread crumbs and put them back in the oven. This worked really well! I think my problem was is that I didn't get enough of the liquid out of the Zuke's before putting them in the oven. Regardless - they turned out super tasty! My secret ingredient? Wildtree's Tzatiki Seasoning! It was great with these Bites!
