Nacho Cheese "Dorito" Flavored Raw Vegan Kale Chips

I'm writing to you from Tim Horton's because my internet is on the fritz at home for some reason!  But I wanted to quickly tell you about this awesome Raw Vegan Sauce I made not only for a veggie or 'chip' dip but for a Zuke Pasta Sauce AND for a flavoring on my Kale Chips - which are in my dehydrator right now, actually!

I added the following into a blender:

1/4 C Raw Sunflower Seeds after soaking in water for 2 hours
1/4 C Hemp Hearts
1/4 C Nutritional Yeast
1/4 C Salsa (just tomato, onion, spices)
1/2 of a sweet red bell pepper
1 Clove of Garlic
2 T Lemon Juice
2 T Water
1/2 Teaspoon of dried Oregano
pinch of sea salt and pepper
dash of cayenne pepper

Oddly...this tasted JUST LIKE Nacho Cheese Doritos but it's Raw and Vegan!  It makes enough to coat two bunches of kale OR a medium zuke to top for a pasta sauce substitute and a bunch of green chard or kale.

2 Lemons
1 large Cucumber
1 & 1/2 inch of Ginger

I'm overjoyed that I am enjoying this so much today!!!

Raw Cashew Cheese


My very first attempt at Raw Cashew Cheese was a success! I sampled it shortly after taking this pic which was right after I took it out of the blender. It has gotten thicker since.

Here's what I did...

2 Cups-ish of raw, soaked for 2 hours Cashews with half to all of the water used to soak
2 cloves of garlic, minced
Sea Salt and Pepper to taste
2-3 T Nutritional Yeast (or to taste)

Add to blender until smooth! YUM!

Cheezy Raw Nacho Sauce

This was given to me from a friend of a friend of a friend who got it from KristinsRaw.com - I need to locate some Hemp Seeds first but wanted to save this recipe :)

Makes 1 1/2 cups

Prep time: Less than 10 minutes

  • 1/3 cup water
  • 1 clove garlic
  • 2 tablespoons fresh lemon juice
  • 1 red bell pepper, seeded and chopped (approximately 1 cup)
  • 1 cup hemp seeds
  • 2 1/2 tbsp nutritional yeast flakes
  • 1 tbsp chili powder*
  • 2sps tamari, wheat-free
  • 1/2 tsp Himalayan crystal salt
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/8 tsp turmeric powder

Creamy Orange Avocado Dressing

3 green onions, trimmed

1/2 avocado, peeled and pitted

1/2 c. fresh orange juice

Freshly ground black pepper, to taste

Puree all ingredients in a blender or food processor until smooth. Cover and chill until ready to use. (Makes 4 servings)

Something with Olives...

I have some Kalamata Olives waiting to be used...when I saw this in my inbox today I was happy!

This tapenade is great to use as a spread for lettuce leaf wraps, a dip for fresh veggies, or even a topping for dehydrated crackers!

Ingredients:

  1. 1 cup good Greek Kalamata olives
  2. 1 cup good green olives
  3. 1/2 cup fennel bulb
  4. 2 Tbsp. fresh thyme
  5. 1 garlic clove
  6. Finely chop all the above items.
  7. Add to that a 1/4 cup olive oil and freshly ground black pepper to taste

I SO have to try this...Raw Vegan Egg Salad

1 1/2 cups cashews
3/4 cup water
1 tablespoon fresh lemon juice
3/4 teaspoon turmeric
1 1/2 cloves garlic
3/4 teaspoon celtic sea salt

3 celery stalks – finely chopped (reserve!)
3/4 of a fresh red pepper – finely chopped (reserve!)
sprinkle pepper (reserve!)
sprinkle paprika (reserve!)

Blend all ingredients (except celery, red pepper, pepper and paprika). Pour liquid into bowl. Stir in reserved items. Serve with romaine lettuce wraps. Yum!

I saw this and thought it was interesting...

Makes 6 servings

Soak 2 cups of fresh pecans (about 1/2 pound) for 5 minutes, rinse them, soak them another 5 minutes, and rinse them again.

Then put into a powerful blender:

  • 8 pitted dates
  • A level teaspoon of Celtic Sea Salt (to taste)
  • 2 - 3 teaspoons of honey (to taste)
  • 1 ½ vanilla beans (optional)
  • 5 - 12 macadamia nuts (makes it creamier!!)
  • Refrigerated cold water to total 60 oz.
Might have to try this...have been pondering more shakes and smoothies lately! This looks like a good start?! Hope my blend holds up!

Turn on low until the nuts are ground up. Then whip it on high for 1 to 1 ½ minutes.

Celery Avocado Stuffing - RAW FOODS

I'm trying to get into more RAW FOODS and when I saw this recipe over at
Raw Glow I KNEW it was right up my alley!

Raw Food Recipe Celery Avocado Stuffing


Ingredients

2 large ripe avocados
1 small bunch parsley
5-6 ribs celery
1 bunch Lacinto kale
2-3 cloves crushed garlic (optional)

Mash avocados in a medium bowl. Chop parsley and dice celery ribs into very small cubes. Add parsley and celery to mashed avocados. You can also add 2-3 cloves of garlic crushed by a garlic press for a spicier taste. Top stuffing with Dulse seaweed flakes if desired. Spread mixture onto Lacinto kale leaves and eat like a wrap or taco. Another option is to stuff bell peppers with mixture or simply add a scoop onto a bowl of mixed greens for a filling salad.

*Variation: Substitue the parsley for cilantro and add the juice of one lime for a south of the border flavor.
