Raw Cashew Cheese


My very first attempt at Raw Cashew Cheese was a success! I sampled it shortly after taking this pic which was right after I took it out of the blender. It has gotten thicker since.

Here's what I did...

2 Cups-ish of raw, soaked for 2 hours Cashews with half to all of the water used to soak
2 cloves of garlic, minced
Sea Salt and Pepper to taste
2-3 T Nutritional Yeast (or to taste)

Add to blender until smooth! YUM!

I saw this and thought it was interesting...

Makes 6 servings

Soak 2 cups of fresh pecans (about 1/2 pound) for 5 minutes, rinse them, soak them another 5 minutes, and rinse them again.

Then put into a powerful blender:

  • 8 pitted dates
  • A level teaspoon of Celtic Sea Salt (to taste)
  • 2 - 3 teaspoons of honey (to taste)
  • 1 ½ vanilla beans (optional)
  • 5 - 12 macadamia nuts (makes it creamier!!)
  • Refrigerated cold water to total 60 oz.
Might have to try this...have been pondering more shakes and smoothies lately! This looks like a good start?! Hope my blend holds up!

Turn on low until the nuts are ground up. Then whip it on high for 1 to 1 ½ minutes.
