Vegan Lasagna

 Today is my very first day and post of Vegan MoFo 2012!  I thought I would REALLY challenge myself by starting off with a dish I've never done Vegan or otherwise...YES...I'm rather Domestically Challenged, folks!

Here is my very first attempt at Vegan Lasagna!
 Here's a closer look at a slice, too!  What do you think?

Well, I must say I was inspired by both Doctor Neal Barnard AND Bryanna Clark Grogan on this one after reading one of (their) books!

I used:

Spinach
Tofu
Wildtree Garlic Galore
Tomato Pasta Sauce
Lasagna Noodles
Mushrooms
Nutritional Yeast
AND...I added my Cheese Sauce I already posts about before

No-Cheese And Mac

 I did a little Cheese Alternative of my own tonight!  It turned out really well!  I'm surprised and actually happy with myself!  Above you can see the Mac&"Cheese" dish and below you can see the 'left over No-Cheese".  It made a lot and you can actually add more Almond Milk for the thickness or thinness you prefer or to stretch your batch.
I use leftover plastic containers when possible.  This was from a store-bought Hummus I bought a while back.  The rest of the "cheese" batch perfectly fit in there!

Here's the recipe I came up with:

1 C (or more) of Almond Milk
6 T Nutritional Yeast
1 T Wildtree Grapeseed Oil
2 Squirts of Yellow Mustard
1/2 T Wildtree Garlic Galore (you can also use 1/4 T Onion and 1/4 T Garlic)

I'm very pleased with the way this turned out :)

Spicy Black Bean Spread or Dip

 I made a Spicy Black Bean Dip/Spread originally inspired by...
You know I LOVE Dips!

I did a can of Black Beans, 1/4 C Medium Salsa, 2 pinches of Wildtree's Garlic Galore - in a blender!

Easy, Peasy!

I really like Joel Fuhrman's Book because there is a Vegetarian Plan as well as a Non-Veg Plan.  He has Meal Plans, Ideas, and Recipes for both!  Check it out!

Lima Bean Hummus

I know I have been posting a couple of times a day but I have so much to share with you on my current Blissful Journey!  

Last night I made a Lima Bean Hummus.  As you can tell from previous posts I kinda-have-a-thing for Hummus!  Here's another one I made that was inspired - yet tweaked - from a really old cookbook - I don't even know the name, sorry!

1 and half cups of Lima Beans - cooked - or canned
2 tea of Wildtree's Garlic Galore
2 T Wildtree Grapeseed Oil
Half of a lemon - squeezed
1 tea dried oregano
2 T Nutritional Yeast

In a Blender...this is darn tasty!  I sampled a little bit last night but will be eating more tonight with dinner and with near-future-snacks.

EZ Un-Cheese Sauce #2

Here's another EZ UN-Cheese Sauce I tried.  I actually attempted this one before the one I posted the other day but had the other one handy to blog about before this one.

As I mentioned before - I do prefer the taste of this one - over the one I posted the other day - but this one makes far less than the other...I suppose I could always multiply the recipe, tho!

This one was inspired by a recipe I found on VegWeb but I tweaked it.

Here is what it contains...

3/4 C Almond Milk
2 T Nutritional Yeast
Pinch of Wildtree's Garlic Galore (it has both Garlic and Onion in it)
2 T Bob's Red Mill's All-Purpose Flour
1-2 teaspoons of Ketchup (to give it that Salsa-Type Flavor)
