Vegan Lasagna

 Today is my very first day and post of Vegan MoFo 2012!  I thought I would REALLY challenge myself by starting off with a dish I've never done Vegan or otherwise...YES...I'm rather Domestically Challenged, folks!

Here is my very first attempt at Vegan Lasagna!
 Here's a closer look at a slice, too!  What do you think?

Well, I must say I was inspired by both Doctor Neal Barnard AND Bryanna Clark Grogan on this one after reading one of (their) books!

I used:

Spinach
Tofu
Wildtree Garlic Galore
Tomato Pasta Sauce
Lasagna Noodles
Mushrooms
Nutritional Yeast
AND...I added my Cheese Sauce I already posts about before

Vegan Lasagna TODAY...what did you make!?

  3. At first glance, the vegan lasagna - well, the sauce covered noodle part, anyway - sort of looked like bacon! Yeah... I guess I have bacon on the mind. (Sorry if that's offensive to vegans ... I don't mean to offend, we all have our reasons for our dietary choices and I respect yours)

    It looks really yummy.
