Teff Flour, Cabbage, Matcha, Oh MY!

Happy Friday!  I don't have much for Midweek Munchies this week so I thought I would just included in this post.  The only couple things I purchased this week were Teff Flour - because I got a SUPER GOOD DEAL on it - usually it's between 8 and 9 bucks at my local herb store but I got this for roughly $2.28.  Another thing I bought was various frozen Veggies and FRESH Cabbage. 


Speaking of Cabbage...I hope to make some Cabbage Rolls...AND SOON!  I must admit I have never actually MADE Cabbage Rolls before but you can fill them with just about anything!  I also had some help from this fellow veg food blogger about prepping the Cabbage!

As many of you know I am also the Co-owner/Co-Founder of Sororitea Sisters and that I am sort of a TEA FREAK.  Shout out to my fellow Steepsters and Sororitea Sisters Anne (co-owner/co-founder as well) and Joely!  The Online Tea Community is a special place!  I'm finding many friends thru tea and online tea sites.  There are so many wonderful companies out there!  I invite you to explore them!  My photo of the day today is that of Matcha.  I didn't add anything to my Matcha - it's just straight up!  I have been thinking about doing more than just drinking Matcha.  You can find more about this at Red Leaf Tea's Site.  They have some great suggestions!

I'm very interested in adding Matcha to my Smoothies I hope to do as a part of my efforts in Carrie On Vegan's Challenge!  And speaking of Carrie On Vegan...today is Friday...Healthy Vegan Fridays!  In addition to these contributions I am just going to re-cap this week's food related posts!

Vegan Pakistani Kima, Music, and Siblings

I was reading a lot of blogs and recipe sites over the past week about Pakistani Foods and a way to veganize them.  I came across Pakistani Kima on a few of them and noticed there were many variations!  From what I gather Kima has the Pakistani version of their their hamburger in it.  I'm far from knowledgeable on Pakistani Foods but am trying to learn so if I am incorrect I do apologize!  Anyhow...I decided to make some last night.  This is what I came up with.  At first I thought I put too much curry in it but it ended up soaking in quite nicely and I was pleased with the way this turned out.  It made a HUGE batch, too!  

2 Veggie Burgers (I used Boca's Vegan Grillers - Cubed) - see note below as to why
1 onion (I used a small handful of Wildtree Onion & Chive)
3 Cloves Garlic (I used Wildtree's Garlic Galore, 1 T)
3 T Grapeseed Oil
1 Can of Kidney Beans
1+ C Spinach
1 C Carrots (shaved, chopped, or sliced) 
2 Potatoes
1 C Water
1+ T Curry
Dash of Cinnamon & Turmeric

I ended up using the Vegan Griller Veggie Burger from Boca because I had some on hand.  I don't really care for them as I think they lack taste but with something like this I figured it would absorb the flavors and it did.  I don't think the veggie burger is necessary in this, tho.  I would have been fine with the Kidney Beans as the ingredient for the vegan/protein ingredient instead.  There are many ways to do this.  You could also add peas, different kinds of beans instead of Kidney, add some ginger (which I was out of), etc. 

I think I will do at least one more Pakistani Dish this week!  I'm thinking Kidney Beans (Rajma)...time will tell.  I do have a few other ideas but lack the ingredients and am not sure if I can get to the store before the week ends plus I am not sure if the stores I have access to have the ingredients I am looking for.  Or they may have the ingredients but at an absurd price or they may not look very good.  That is what I have been running into lately.  I can't wait until Spring so I can start driving a little farther without worry.  I'm totally over winter!  I'm NOT a Winter Weather Fan...this coming from someone who has lived in the snow belt her entire life.

Aaloo Bhaji Fried Potatoes, Dressings, Soups, Handshake From A Friend

 I was going to post this tomorrow but I really couldn't wait!  Here is my first attempt at a Pakistani Dish!  Special thanks to Lindsay for this week's World Foods Suggestion of Pakistan!

Since I was making a smaller batch - for just myself - I got two nice servings out of this!

* 2 C Potatoes - cooked
* Small Handful of Wildtree Onion & Chive Blend (or you could use 2 small onions
* 1 t Black Mustard Seeds
* 1 t Red Chili Powder (and/or Cayenne)
* 1 T Earth Balance (I also used a splash of Garlic Grapeseed Oil)
* 1 t (or less) of Turmeric
All on the stovetop until desired texture and darkness is reached.  I will say this had a bit more kick to it than I expected but still enjoyed it!

Yesterday I told you about a Salad Dressing I was going to make.  Well, I changed it up a bit.  This is what I did instead...

2 Avocadoes
1 1/2 C Diced Tomatoes (or stewed)
1/2 C Water
2 T Wildtree Taco Seasoning
1/2 C Lemon Juice

This turned out AMAZING!  I might split the batch...add a little more water...for a more 'drippy' salad dressing.  BUT...the way it is right now...creamy yet thicker...I just might try a little bit warmed as a soup tonight!  It was SO good!
Every morning before I leave the house I take a 'head count' of all the 'kids'.  Usually I will find the 2 cats upstairs either in the bathroom area where they have their food on one side and 'bathroom' on the other side of the room OR I will find Gabby in the hallway and Charlie either with her or on his chair in my craft room.  As for the dogs - Suzie and Riley are either on the sofa, loveseat, or recliner - either together or at least NEAR each other.

I also say goodbye to each one while doing the 'head count' and try and sneak a kiss from the pups.  The last two mornings Suzie, here, didn't give me a kiss, which was STRANGE...but she did reach out to shake my hand.  Perhaps she wasn't awake yet.
