A Twist on Tortilla Soup


Forgive me for this terrible photo!  The lighting is awful and I didn't even have a different color bowl to show it's true colors!  Anyhow...the soup was DARN TASTY and I can't wait to make more!

Here's what I put in my twist on Tortilla Soup!

5 to 7 Red Bell Peppers
3 Tomatoes
2 T Minced Onion
2 T Minced Garlic (or Wildtree Garlic Galore)
2 T Grapeseed Oil
2 C Water
1 C Almond Milk
2 T Bob's All-Purpose Flour
2 to 3 T Balsamic Vinegar
1 T Smoked Paprika
1/2 t Cumin
1/4 C Dried Basil
1/4 C Vegan Cheddar Shreds
1/4 C (or more) Corn
1/4 C (or more) Tortilla Strips
Pink Himalayan Sea Salt to taste

So I basically put all ingredients into a blender except for the Vegan Cheese, Tortilla Strips, and Corn.  I added those in later while heating on the stove top.  This is probably one of my favorite soup attempts in a while!  YUM!
