Today's Vegan MoFo Prompt is "Quick, Easy, Delicious"...well most of my foods are QUICK so I figured what could be quicker than throwing some things in your high speed blender? Take a look at this Raw Vegan Creamy Carrot Soup! It only has a few ingredients and the sprinkled ingredients on the top are optional.
3 C Carrots (Chopped)
1 C Cashews
1 C Water
Sea Salt to Taste
Optional: pinch of Nutmeg, pinch of parsley

That soup looks AMAZING! I would love to see an end of the season tomato soup. I have been thinking of a horseradish Dijon hummus. It seems like it's a great time of year to work with eggplant, squash and tomatoes!

Deleteoh yum! I'd like you to feature avocado because I could eat it every day. I always want to include it more! :-) I guess that goes for the hummus flavor too. Keeping with the theme....avocado, broccoli and basil...does that count even though it is an herb?

DeleteI've only just started making raw soups, definitely going to have to make this raw carrot soup...it looks so delicious! And 3 fruits/veggies that have a similar colour...zucchini, lime, green capsicum (or bell pepper I guess you call them??).

DeleteI have a Vitamix but still haven't tried raw soup. This looks like a great recipe to start with! Looking forward to the hummous combinations. The most unusual one I've made was for a Christmas party with toasted walnuts, orange zest and cranberries.
