Vegan MoFo ~ Vegg Fried Rice

For today's Vegan MoFo Post I have to give a little shout-out to Suituapui!  This is my very first attempt at Vegg Fried Rice (or a Vegan Egg Fried Rice).

Yes, it's true I tried using Vegg for this.  It worked pretty good but I will be tweaking it a bit.  I used the equiv of 2 to 3 'eggs' and next time I might use double that.  I also might whisk by hand (eventho it suggests NOT to do it that way on the package) to see about getting more of that 'yellow yolk color'.  Another way to go would be to use Tofu...maybe in addition or soak it in the "Vegg" even.

Regardless the aroma was 'right on' and the taste was just about there, too!



Here's what I put in this dish:

About 2 C of Cooked Brown Basmati Rice
1 T Wildtree Chili Grapeseed Oil (a now discontinued product) - OR use a bit of oil & Red Pepper Flakes
1 C Mixed Veggies (I used Carrots and Peas)
1/2 Scallion (or onion or green onions)
1 tea Vegg PLUS 1/4 C Water (next time I will use double this)

In the second photo you can see the "before" picture with the Vegg prior to stirring.  I'm still a beginner with the "Vegg" but I am enjoying the learning process!

  1. Looks good. Usually I would push the rice and everything aside and break the egg on the pan/wok before mixing it all together. That way, you will have some bit of egg in their own and some of it coating some of the grains of rice. But should be fine doing it your way - and not fry the egg first before frying the rice - then there will not be any taste of the egg in the fried rice like two separate entities.

    I'll try a vegan one soon - when I can drag myself to the wet market to get the veg that I would use. Yes, I'm sooooo lazy! LOL!!!

    1. What would/could you use as the vegan egg? Have you tried "the vegg" before?

    1. I have another Vegg Fried Rice dish to post about this week! It's a bit different but the same idea. I did try and do the vegg with a scrambled 'egg' type method but it didn't work so hot! Maybe with tofu it will work better

    1. I have been doing more and more with rices...all sorts of rices :)

      I might have to go on a rice Shopping Spree again soon! I'm getting low on the different kinds. I have brown rice and wild rices and black rice but not the others I used to have :)

  6. That looks great, it's interesting that we prepared our dishes on the same day. With vegan fried rice I usually don't use tofu. There's so many vegetables and other good things in the dish that you really don't miss an "egg replacement."

    1. Indeedy! That sort of cracked me up, actually! So cool tho!

      I have a feeling I will be doing LOTS of "stirfrys" in the coming days and weeks! i just found out that our "Dollar Tree" has a new Freezer Section and they have LOTS of frozen veggies and I bought some yesterday! I'm eager to try some more things with them!
