Vegan MoFo ~ NOT My Best Work...

I'm not going to post a recipe today because I wasn't overly pleased with this attempt.  I'm trying to get thru these noddles that I really don't care for and also wanted to make a creamy sauce with lots of vitamins and nutrients in it.  It still needs a lot of tweaking!  I did use the following ingredients, however...Baby Spinach, Silken Tofu, Nutritional Yeast, Walnuts, Garlic, Lemon Juice, Grapeseed Oil, Tomato Paste, Tomatoes, Balsamic, Dill, Bread Crumbs, and on top I added a sprinkle of Wildtree Spicy Chipotle Ranch dry seasoning.  Again...NOT my best work but it filled the stomach, I suppose.

I did end of getting a new bowl at the Dollar Tree the other day!  I love the color - ORANGE or a brunt Orange, I guess.  I got another one, too!

In other news I have made a few changes to my site!  I went with a different shade for the headline separator.  I added a few Gallery icons that I will be starting on various sites.  In my links section or "other stops" I added some more links!  As always the BOLDed ones are the people who comment back...in case you are looking for some new blogs to follow or new friends.  NOT all of them are veg, tho, just a heads-up.


Last night for dinner I tried Upton's Seitan Bacon Strips.  I did them in a frying pan on the stove top but I think I had them on for a bit too long because they were overly crispy.  I do have more left and may try them again tonight but just be careful how long I have them on there for.

I bought some Wheat Rolls from a local Deli and had  a vegan version of a BLT with them.  The lettuce was actually Baby Spinach but it was still great as far as the L and T were concerned.  I'm determined to make the "B" just as good with tonight's attempt.  I'm sure I will blog more about my adventures in Seitan Bacon soon!  Sorry this is a short blog post I was a little short on time today.  But tomorrow is another day, eh!?  How did your Thursday go?

  1. I understand how it is to want to have a post and you feel like the dish fails. It happens to all of us and you were still able to share your failure and move on! :-)

      Good news, tho, I re-attempted the Seitan Bacon and it was MUCH better - I just overcooked it too much!

  3. Oh that's too bad, but we can always learn from the food mistakes we make. I usually find a way to tweak it if I decide to make it again. Thursday went very well. I'm on day five of my juice cleanse and I feel even better than I normally do. ;)

      So glad you are doing so well! I have been giving some thought on HOW I might go about my 'feast or fast' next week! I might do a variation of sorts! I will have to see how the produce situation is this weekend at the Farmers Markets and might do 'all liquids' for a week! I will blog more about that today!

    2. Well you could always just do one meal that is juice only. I did that last week to ease into my juice fast. As I mentioned physically I was more than ready, but I thought It would be a great idea to prepare for it mentally. I think that was helpful, by the time next weekend ends I'll believe I'll be ready for the next phase... water fast. I still haven't decided if I want to do a three or seven day water fast. Water fasting is nothing knew to me, so we'll see what I decide!

    3. I think I might do Juices and/or Smoothies for Breakfast and Soups for Lunches and/or dinners.

      My 'cave' might be hummus - but it's still 'blended' :)
      I will limit what I dip to celery, I think, tho :)

  4. Been there with plenty of recipe flops, my most resent was raw asparagus soup that turned out inedible, lol.

    It's nice to hear others don't make perfect meals all of the time, I don't think enough bloggers post about challenges like this.

    1. Thanks :) I guess I am just overly honest! LOL - I know what you mean about some blogs being TOO positive and perfect...I try and stay positive but I am FAR from perfect! teehee
