Meal Plan or Hope For This Week

 I skipped last week because I was planning on being on the road for most of it.  So I'm picking it up again this week!  I don't have a solid plan for this week, to be honest, but I do have some ideas I hope to follow thru with!
To start things off...I CAN tell you want I had for Breakfast and Lunch already today!
I even took photos!

Monday:
Breakfast - "Everything" Bagel with Wildtree Guacamole
Lunch - Chipotle Black Bean/Veggie Soup
Snack - Apple
Dinner - Some Sort of Pasta with Veggies
Snack - Hummus with slices of Sweet Red Bell Peppers

Tuesday:
Breakfast - Grapenuts with Coconut Milk & Black Berries
Lunch - Leftover Pasta/Veggies
Snack - Peanut Butter Granola
Dinner - Tabouli Sandwich
Snack - Dark Chocolate/Peanut Butter & Crackers

Wednesday:
Breakfast - Mango & Peanut Butter Granola
Lunch - Leftover Tabouli Salad
Dinner - Veggie Burger of some sort (TBA)
Snack - Hummus & Corn Tortillas

Thursday:
Breakfast - TBA Smoothie
Snack - Grapenuts & Coconut Milk OR Peanut Butter Granola
Lunch: Leftover Tabouli (Wrap or Sandwich, maybe)
Dinner - Possibly Spaghetti (with Hemp Hearts)
Snack - Corn Tortillas w/ Guacamole

Friday:
Breakfast - Bagel with Nutritional Yeast Sprinkle
Snack - TBA Granola
Lunch - TBA Rice Dish
Dinner - HUGE Salad (TBA)
Snack - Bread & Grapeseed Oil Bread Dipper

Saturday & Sunday:
TBA - might be on the road

Meal Plan Hopefuls

I enjoyed blogging about my Meal Plan HOPES last week and it seemed other liked that twist I put on it.  I'm going to do it again today...this is what I HOPE to have for my meals this week - at least it's a starting point, eh!?

Monday
Breakfast: Coconut Chia Granola
Lunch: Whole Wheat Flatbread with Almond Butter
Dinner: Vegan Mac & Cheese, Whole Wheat Bread, Earth Balance w/ Nutritional Yeast Sprinkle

Tuesday
Breakfast: Cinnamon Raisin Granola
Lunch: Rice & Veggie Dish (Type TBA)
Dinner: Falafel, TBA Veggie, maybe Hummus
Wednesday
Breakfast: Chia Waffles
Lunch: Leftovers (TBA)
Dinner:  Artichoke Cashew Burger (Maybe in a Casserole)

Thursday
Breakfast: Mango Chia Smoothie 
Lunch: Tabouli Salad
Dinner: Leftovers

Friday
Breakfast: Chai Waffles
Lunch: Tabouli Wrap or Pita
Dinner: HUGE Salad

Saturday:
Breakfast: Mandarins
Lunch: Leftover Tabouli
Dinner: TBA - Out

Sunday:
Breakfast/Lunch: TBA Smoothie
Dinner: Veggie Salad (maybe Sub)

It's Not Really My Meal Plan - But a Meal HOPE

...On a TUESDAY...

It's near impossible for me to stick to a meal plan...it REALLY is!  I never know one day to the next what will happen with my schedule or what I might have in the house OR what my husband will eat.  Our diets are very VERY different.

So this is more of a Meal Plan HOPE that I have for this week.

Monday:
Breakfast: Cinnamon Raisin Granola
Lunch: Cashew Cheese/Spread & Wheat Crackers
Dinner: Amy's Kitchen Vegan Cheese Pizza

Tuesday:
Breakfast: Sprouted Tofu/Spinach/Salsa Scramble
Lunch: Cinnamon Raisin Granola
Dinner: TBA Casserole, Mandarin Oranges

Wednesday:
Breakfast: Cinnamon Raisin Granola, MAYBE Apples
Lunch: Sprouted Tofu/Spinach/Salsa Scramble (MAYBE in a Wrap or Pita)
Dinner: Vegan Mac & Cheese, Nachos, Salsa

Thursday:
Breakfast: Mango Chia Smoothie
Lunch: Granola with Mandarin Oranges
Dinner: TBA Rice Dish/Casserole

Friday:
Breakfast: Mandarin Oranges
Lunch: Rice Dish Left Overs
Dinner: Large Salad - Toppings TBA

Saturday:
Breakfast: Bagel with Earth Balance & Nutritional Yeast Sprinkle
Lunch: Lettuce/Tomato/Onion/Cracked Wheat Sandwich
Dinner: TBA - Eating Out - Probably LARGE Salad

Sunday:
Breakfast: Bagel with Earth Balance & Nutritional Yeast Sprinkle
Lunch: TBA (Salad or Sandwich)
Dinner: Unknown.
