Homemade Apple Cider Vinegar Drink & YouTuber of the Moment


My first attempt at Homemade Apple Cider Vinegar Drink - Apple Cinnamon Flavor:

16 Ounces Water
4 T Apple Cider Vinegar
8 Ounces Apple Juice
3 tea Agave
2 tea Lemon Juice
1/2 tea Cinnamon

I feel this was a success!  And the timing was PERFECT because I just ran out of a 32 Ounce Guava and Black Tea Juice I bought from Trader Joe's!


Last night I discovered the YouTube Channel of No Egg Craig!  Apparently I'm a little bit behind with my discovery but I thought it was still worth a mention!  As I binged watched several videos I noticed something his family and I had in common (other than eating vegan, that is) it was the Buffalo to Syracuse Accent!  I had a hunch he was closer to the Syracuse area and sure enough I was right!  Come to find out he's not too far from The Vegan Zombie guys!  Gotta LOVE those 'Hard A's" in the Syracuse and Buffalo Accent!  I still can't shake it myself!

I'm totally LOVING this channel because he does a lot of shopping at Aldi and Budget Friendly Videos!  After watching a few of his quick meals I realized I'm not the only one who does creative quick meals that non-vegans may find a little CRAZY.  One of them I haven't tried and MUST is the Pumpkin Oats he does often and is featured in this video!

Thrown Together Veggie Curry


Nothing overly exciting happening this week in the kitchen - sorry folks!  I've had a bunch of volunteer stuff going on and busy at work, too!  But one of the things I have been eating a lot of lately is home made veggie curry that is vegan and literally thrown together!  I can't even tell you what the ratios of ingredients were - again, sorry!

What I can tell you is what I threw in!  This veggie curry contains coconut milk, Earth Balance, Cashews, Spinach, Peas, Chickpeas, Tomatoes, Tomato Paste, various spices, etc.  This made a HUGE HUGE HUGE batch!  I ate leftovers for 3 meals AND froze a large container and just finished that up a few days ago.  It was tasty!

I have been doing a lot of loaded vegan nachos as a meal lately, too!  This time of year I tend to get bored with food whether it be because it's hard to find good quality fresh produce and/or because I suffer from Winter Blues...that is yet to be determined.  It's probably a little bit of both!

Past Weekend Adventures, Yogivore, Thrown Together Meals

Slowly but surely I am trying to catch up on blogging!  This post will be a mish-mash of a post but there are two other posts if you scroll down that I wrote earlier today that DO have a method to their madness!

A few weeks ago my husband's brother and his girlfriend, Dale, and I went on a ride.  He recently bought a used Mini Cooper so we drove around a bit in our Abarth.  We ended up in Bradford, PA, one weekend and the next weekend we ended up near Bemus Point, NY.  Neither are too far away from where we live but still a nice day trip!

The first photo is of Dale and myself in front of the Kinzua Dam near where we live.  Believe it or not this was just a few short weeks ago!  There were hardly any leaves on the trees and now the trees are FULL and green and gorgeous!  Mother Nature is funny sometimes!

With how crazy work has been paired with family and extended family health issues I have been throwing a lot of meals together based on when is on hand.  This photo is actually taken at my mother's house.  She doesn't usually stock her pantry very well since it's just the two of them and neither one of my parents are vegetarian.  Plus they haven't been doing much cooking at home lately.  I was able to find some white rice I 'doctored up' with some Wildtree sauce and did some potato/fries on stove top instead of in the oven with a bit of grapeseed oil.  They turned out good and filled my tummy that day!
I don't usually do that - create a plate lacking veggies - but that day it was what was available.  Since then I have been doing much better and I hope to post more of the meals I have been making soon, too!

I'm mostly doing this to challenge myself but also break up the day a little bit.  I've been getting into this routine of waking up - going to work - eating - writing - and going to sleep - and I need to switch it up a bit!
