My Chickpea Casserole Was Featured!

Hi Gang!  One of the many projects I am involved in is writing for The Raw Food World NEWS Site!  They have a lot of great recipes in their recipe section, too!  This is one of the many recipes of mine that I submitted - and guess what...they featured it TODAY!  For the entire recipe, instructions, and information CLICK HERE.

A short list of ingredients that were used in this recipe were...

  • 2 cups brown rice pasta
  • 3 tbsp flour
  • 2 tbsp grapeseed oil
  • 1 cup almond milk (or nut-milk of your choice)
  • 1/2 cup vegetable stock
  • 2 cups chickpeas
  • 1/2 cup bread crumbs
  • Pinch paprika

Aftermath: "Cheesy" Cauliflower Casserole

First, let me start this post off by saying this is my 3rd post today and all 3 of them progress so please scroll down!  This is what I ended up with!  It ended up being a "Cheesy" Cauliflower Casserole instead!  After 15 minutes at 350 degrees my 'cheese' wasn't melting fast enough.  I took it out of the oven - stirred - then added some Almond Milk, Nutritional Yeast, and Rice Crumbs.  I will post about my NEW Rice Crumbs soon!  Probably within the next day or two!

I baked this for another 10 minutes or so and I must say I am very pleased with the way this turned out.  I had a small sample of it and am looking forward to it for lunch tomorrow!  I will also be having Vegan Lasagna Leftovers for Dinner tomorrow, too!

More Grains

So I have been doing roughly 90% Raw Foods for the past almost 2 weeks and it has REALLY helped my digestion but after visiting with my new CDN yesterday she wants me to add more grains.  Which...in the past I haven't had a problem with - I was hoping to stay about the same amount RAW - but she did like what I was doing with my amount of raw...just wanted me to add more grains to it.  She wants to see more casseroles, for example or more sandwiches.  I'll try it - she said we can always change it later if it doesn't work well with my digestion issues.  So because I will be adding more grains I will be about 75-80% raw with the addition of grains, I guess.  The most important part of my whole visit with her is that she wants me to totally eliminate dairy.  So...I wasn't over analyzing it!  YAY!  So...basically Near Vegan.  I'm ok with that!
