What a week and it's only Tuesday! Instead of getting into the craziness of it all - I figured I would share a dish I made last week - instead!
"Cheesy" Sage Polenta Topped With Roasted Brussels Sprouts
Recipe for Polenta Part:
1 C Polenta
3 to 4 C Water
1/4 C Sage
2 T Earth Balance (or Oil of your choice)
1/2 C Nutritional Yeast
Recipe for Roasted Brussels Sprouts Part:
1/2 Pound Brussels Sprouts, halved
Grapeseed Oil, drizzled
Salt, Pepper, Garlic Powder, to taste
I topped the Polenta with the Brussels Sprouts and sprinkled more Nutritional Yeast on top.
This was SO GOOD! This was a wonderful comfort food. It was warming to the body, heart, and soul and was more filling than I thought it would be! I will certainly be making this again in the near future!

ReplyDeleteI love brussels sprouts and am so happy to see them at the market right now. I just can't eat enough of them and I love the sound of the polenta.

Also, this recipe looks easy, tasty, and comforting (I'm a huge fan of both polenta and Brussels sprouts). Also looks easy to modify to make oil free. I think it would be very easy to make oil free...maybe roast some sweet onion with the brussels sprouts instead of oil...might have to just keep an eye on them closer so they don't burn as fast.
