Raw Zucchini Fettuccine with Creamy Walnut Dijon Sauce

As usual I have a lot of blogging to catch up on but it's shaping up to be a VERY busy week already!  I will blog when I can but also schedule post a few since I have a lot of photos and foods ready to go!

As many of you know last week I did an ALL RAW WEEK.  It was great!  Eventho I started eating non-raw again I intend to stick with a high raw or a high raw food intake from now on.  So you will still see Vegan Dishes here but you will also see MORE Raw Vegan Dishes, too!

First up...from a few days ago...Raw Zucchini Fettuccine with Creamy Walnut Dijon Sauce!

Yes!  I dug out my Spiralizer and used it on this!  I went for the thickest blade. Here's the recipe I used on this sauce...
1 Avocado
1/2 C Walnuts
1 C Water (maybe more)
2 T Nutritional Yeast
2 T Lemon Juice
1 T Dijon Mustard
2 Cloves Garlic
Turmeric for color - as needed
Cayenne for color and kick - as needed

This was awesomely flavorful when I ate it and I did eat a LOT of it...perhaps a bit too much, actually.

Last week I mentioned a few things I was excited about on the way I was feeling from my all raw week but I must tell you about some additional findings once going back to NOT raw.  I think this is the biggest thing to mention...how you feel after you switch back.  Well, it wasn't great.  I really only ate some "popped" corn chips and I will tell you that my tongue felt RAW for 2+ days.  I wasn't happy about that.  It really hurt.  I will never eat THOSE 'popped chips' again.  Also the next day my tummy was gurgling oddly for most of the day.  I didn't think I ate that much that was 'off the charts' but perhaps I did.  Or maybe it was my body telling me that I really preferred the raw instead of the NOT raw.  Regardless I will be eating a lot more raw from now on.

  1. Oh my... that looks very creamy!

    Gurgling can mean a lot of different things, check out your bowel movements to see if they are any different. Are you seeing extra things in their, etc., Gurgling for me usually means I'm about to pass something interesting, but again everyone is different. Bowel health is very important, it's a shame it's not talked about like it used to be years ago.

    1. Since cutting Dairy I've been once a day! When Raw I was twice a day! Nothing too unusual that I saw...or different or interesting, really :)

  2. Twice is good, you might be surprised how much you go the cleaner you eat. ;) I need to write a post about that soon. Knowing what you are looking at, when checking out your stool is very helpful.   3. Very interesting on your raw week. I notice energy crashes when I come off a few days of cooked/splurge eating.

    1. This week I have been on the go a lot and not eating like I did last week but I hope to pump up my at-home produce this weekend and re-start. I have been doing salads when I can just not at home.

  5. Looks good! I've been wanting to add a few raw meals to the rotation, mostly because I don't care for many cooked vegetables, and partially because I can't eat anything too heavy once the summer heat comes back.
