The other night I made Vegan Creamed Spinach and that recipe can be found HERE.
Last night I had that for dinner and wanted to do something a little different with the left overs for my lunch today. So I took a little bit of the following:
Splash of Wildtree European Dipping Oil - Chili (Grapeseed Oil)

Chickpeas
Corn
Long White/Basmati Rice
Corn
Long White/Basmati Rice
I heated it up and am eating it now! I'm VERY happy with this left over concoction! I would definitely do it again! It's tasty!

ReplyDeleteToday I made broccoli soup for my daughter. Lots more than broccoli go into the soup (tomatoes, carrots, garlic, spice and cheese) but broccoli is the main ingredient. I puree all the ingredients together, snd she drinks her soup from a cup.

DeleteI must admit, I've never had the luck of ending up with leftover creamed spinach, but I think I may just need to make a double batch next time. Having this pilaf the next day would be worth it! Great way to re-purpose those leftovers.
