Vegan MoFo ~ Best Sandwich Ever!

I'm a simple food person and don't take a lot of time to 'cook' things often.  When I saw the prompt for Vegan MoFo today I thought of all of the multi-layered massive sandwiches that I am sure to see and be in AWE of.  But when I do sandwiches I usually just use what I have on hand.  One of my favorite things to do is make some sort of a Chickpea Salad or Chickpea Spread to use on my sandwiches.

This is a flashback of a post a did a while back but tweaked a bit...

2 C Chickpeas (mashed or in food processor)
1/2 C Dried Cranberries
1/4 C Chopped Walnuts
1/2 T Minced Garlic


Another one I have done is this...

1 can of Chickpeas
1/3 C of Vegan Mayo
2 tea Yellow Mustard
2 T Chopped Relish/Pickles
1 Rib of Celery, Chopped
1 tea Wildtree Onion & Chive Blend

  1. I love chickpeas salad too. The first one sounds amazing, I've never tried cranberries in mine.

  6. I like to keep things simple for food too, a high raw whole foods diet celebrates whole ingredients for me that can be thrown together quick. But these chickpea salads look amazing and worth the time since hubby loves sandwiches. :-)

    1. Thanks! They are great to throw together in my Ninja Blenders. Now that I have high speed blenders I still use my Ninja's as a rockin' food processor!

  7. That sounds like a great sammich Jennifer! I like mashing chickpeas - what a nice texture it adds to things, especially a good sandwich like this.

    1. Mashed chickpeas are great - I agree! I love adding different flavors to them to see what kind of creations I can come up with, too!
