A raw vegan answer to 'beef tips' or 'steak strips' that I made in my dehydrator over the weekend. It was fun to make and I'm saving them to use on salads and some stir fries this week!
Recipe as follows...
1 Eggplant
soaked in...
1/3 C Balsamic
1 T Hemp Oil
1 tea (or more) Kelp & Cayenne Seasoning/Mix
1/2 tea GoL's Perfect Food Energizer
After soaking the eggplant strips in the mixture for about a half hour I saved the marinade and will be using it on other things this week. I put them in my dehydrator for about 6 or 7 hours at about 115 to 118 degrees.

I chose this GoL product to add to the mixture because of the 'green' taste to it from some of the ingredients being Broccoli, Spinach, Brussel Sprouts, and more. Check out the link above for more ingredients in this powerful blend.
Hmmm not a huge fan of eggplant (I know... what a weird vegan), but this actually sounds pretty good =) I've never thought of dehydrating either, would make for a good snack!
ReplyDeleteWith Eggplant it's really what you season it with. But the texture could be something, too! I understand! Really! I mean...I hated bananas my whole life and people think that is strange. I finally got to the point where I don't mind about a half of one in some flavored smoothies!
DeleteLooks like a yummy lunchbox addition :) Thanks for sharing.
ReplyDeleteI gnawed on one last night and they do make a good snack...if I were to flavor them overnight and have it be more intense and completely dry them they would be like Eggplant Jerky. I might have to try that soon!
DeleteThis sounds awesome! I need to buy a dehydrator.
ReplyDeleteIf you do - check out my affiliate link for savings! Excaliburs are awesome! I LOVE mine!
DeleteThis looks wonderful, what a great snack idea! And thanks for the kind words on Skipper. :-)
ReplyDeleteThis was fun to make! I hope to do more like it soon. Again...I'm so sorry to hear about Skipper. He was a very special guy! So glad he had you and you had him - even if it was only for about a year to year and a half. HUGS!!!!
DeleteHi Jennifer,
ReplyDeleteWhat a creative twist on eggplant! I can just imagine how tasty these tips are! What is the texture like when you chew them? Thank you so much for sharing this healthy and delicious raw vegan eggplant tips recipe at the Plant-Based Potluck Party Blog Hop! I appreciate it.
I didn't complete dry them to a crunch so they are still a little chewy.
ReplyDeleteAwesome idea! I have never tried eggplant in the dehydrator but I'm going to give it a go now :-)
ReplyDeleteI think it was a first for me, too! My goal is to do more out-of-the-box things in the Excalibur in the next month or even over the winter months :)
