Today's Bento Box & More Kale Chips

I have a fairly simple lunch today in my Bento Box.  I have Whole Wheat Sandwich Rounds in the bog container with Spicy Cashews surrounding it - I must make more - they didn't last long!  Then in the center I finished up some shredded lettuce the reddish/orange sauce is the leftover sauce I used on my newest Kale Chips...I had just enough to use as a spread for this Bento Box Sandwich.  Then you will see a little section of dried Salt & Vinegar Zuke Chips!

Here's a photo of it all assembled, too!  I'm LOVING my boxes and my insulated bag!  They are easy to clean!  I MAY be getting something in the mail that I might be able to incorporate with my Bento Box Adventures - if I do - I will keep you updated on that if it happens!

My Mini Goals have been going fairly well!  I still have to JUICE and get to making Christmas Eve and Christmas Day Foods but other than that all of the other Mini Goals are going well so far!

You probably can tell I LOVE Kale Chips...most people do...that have tried them...but I REALLY LOVE them...especially now that I have my upgraded dehydrator!  Woot!

They are Cheesy but also a little sweet! 

Here's what I did for the sauce for these:
 
About 6 C Kale, Chopped
1 C Cashews, Soaked
1 HUGE Red Bell Pepper
4 T Lemon Juice
1 T Agave Nectar
1 tea Onion Powder
1/2 tea Turmeric
Sprinkle Pink Himalayan Sea Salt
1 teaspoon GoL Perfect Food Regular Flavor

I have a few other things to post but I will wait until tomorrow and the weekend!  What do you think I should try for a Kale Chip Flavor NEXT!?

  1. Your lunch looks great and so do the kale chips! I need to juice more too, that and sprouting more are on my goals list.

    1. They are expensive here, too! I have found since I am not buying a lot of the packaged foods anymore I can splurge a bit on the different kinds of nuts. Nuts are expensive across the board, I have found! It's crazy! They shouldn't be! I'm having a heck of a time finding some of them and when I do I really have to think about if I want to spend the $ on them or not! Eeeek! I REALLY want Pine Nuts and they are around $10 for a half pound here locally...I think. I was finally able to find some Brazil Nuts - at Walmart of all places - might have to buy them next time I am there. One nut I want to try is the Pili Nut and might have to try and buy them online! I haven't ever seen them in person.

  4. So glad you like making your bento lunches. I think it's a great way to introduce portion control and gives you a variety of tasty food. My daughter loves her lunch in her Zojirushi tiffin jar. The same concept as bentos but they are stacked tiffins similar to what you see in parts of India.
