Mediterranean Inspired Sauce with Green Beans - 2 Ways!

Last night I wanted something with a Mediterranean Flavor to it but that was the only rule I wanted to stick to.  This opened up a slew of possibilities - that's for sure!  I found an idea in one of my old Cookbooks and tweaked and ran with it!  What started out as side for Green Beans with a Mediterranean Sauce - turned into my lunch for today as more of a complete meal.  I was intrigued by the sauce idea that was mostly made up of Olives and Sun-Dried Tomatoes.

Here's the Sauce Recipe:

6 or 7 Sun Dried Tomatoes (About 1/4 C)
About 8 or 9 Black Olives (About 1/4 C)
Splash of Grapeseed Oil
2 Cloves of Garlic
1/4 tea Oregano

Of course I added about 2 Cups of Green Beans and a small handful of Pine Nuts to this and threw in a few sprinkles of Wildtree's California Garlic Pepper.

This was quite good as a side dish in its own right but I wanted to make it more of a meal and take it for lunch! 

I cooked up some Brown Rice and mixed it all together!  It made a wonderful flavor combo!

I'm very excited about this sauce!  I would have never thought about using the Olives and Sun-Dried Tomatoes as a base for it!

I have to give a 'thumbs up' to the Mediterranean Vegan Kitchen Cookbook for the original idea on the sauce!  But...you know me...I don't follow recipes from start to finish so this was tweaked a bit!  Tasty, regardless!

  1. Long beans? Just boil and eat, very sweet...or fry with garlic, add salt according to taste - very nice already...provided the beans are not too old. They do sell those here...unfortunately, must be able to tell.

  2. Oh that looks great, I mainly eat them plain but this is a nice alternative too. We love olives! When my daughter was younger she'd go through a jar in a few days. I made sure I always had them on hand.

    1. Thanks! I mainly eat them plain, too, but I was really interested to see how this sauce was going to be with them!

      With Olives - I tend to go in spurts - sometimes I find them a bit too salty - and they are hard to find REALLY fresh where I am.

    1. I don't think it tastes like olives, per say, but it's a taste of it's own :)
