Easy Cheesy Vegan Hummus & Christine's Creamy Tomato Soup

 A few Food items from the weekend...I needed to stock up on my quick midday meals and snacks and many of you know I am a fan of soups as well as dips and spreads for veggies and crackers and such.  First I have this Easy Cheesy Vegan Hummus.  It's my first attempt and it was pretty good but might tweak it a bit down the road.  Here's what I did with it...
2 C Chickpeas, 2 T Tahini, 1/4 C Nutritional Yeast, 1 tea (or less) Turmeric, 1 T Grapeseed Oil, Juice of 1 Lemon, 1 T Wildtree Garlic Galore, 1 tea Parsley, 1/2 C Water, small handful of Potato Flakes as a thickener.
Another thing I did in preparation for this evening's dinner was Christine's Creamy Tomato Soup that looked awesome on her blog from last week and I HAD to try it.  Since it's her recipe I've linked it but won't give away the recipe here.  Swing by her place and check it out.  The only thing I switched (because I didn't have Onion Powder on-hand and was low on fresh garlic) was I used Wildtree's Garlic Galore instead.  All other ingredients were the same.  I'm thinking the texture difference was mostly because I used a Ninja and Christine (I Think) uses a Vitamix.  When it comes to creamy soups in my Ninja I still need a little work with it...but I do LOVE my Ninja's for almost everything!

  1. I love crunchy tomatoes raw but not cooked, same with cucumber, and I'd go for other soups if I have a choice, not tomato.

      I need to get into more soups and FAST I think they will be my staple this winter for lunches!

  2. Thanks for linking my soup! Yes, I used a Vitamix and ran it on high for about 2 minutes to hit the smooth texture which can be a challenge with hemp seeds. Never worked with a Ninja, but it looks like a powerful monster too.

    1. I think the ninja is better than any blender I have tried thus far but of course the Vitamix is the ultimate (I haven't tried one yet, myself, tho) and I will love my ninja's until I win the lottery and get a Vitamix! LOL :)

  3. Ok, so I tried making hummus for the first time the other day in my fancy new vitamix... and it turned out super bland. I will definitely have to try your version =)

    1. I LOVE making hummus! I make all sorts, too! i will be coming some more soon! This Cheesy one wasn't my favorite flavor but it was unique and a nice try! I really like the Avocado ones best so far! I think I will try and make some tonight, too!
