I ended up doing a HUGE salad last night for dinner! I do LOVE creative salads! The first picture above you can see it's stand alone - all mixed up - and the second one I took before 'tossing' so you can see the ingredients better (other than the lettuce, that is). What did I use in this salad?
Well, let me tell you!
I used Petite Oak, Gem, and Tango Lettuces, Zima Tomatoes, Sweet Mini Red and Yellow Peppers, Vegan Won Ton Strips, and Organic Vegan Ranch Dressing.
Had I had some handy - I would of probably added some Almonds and I forgot to put Hemp Seeds on it!
This totally hit the spot! I LOVED this salad in more ways than I can express!
In other news...
My Lentil Sprouts are finished sprouting! YAY! I think they turned out FAB this time around. I saved some to used on a veggie burger in the very near future. But I also made a Marinated Sprouted Salad. In the photo above you can see it naked.

Sprouted Lentils
Zima Tomatoes
1/4 of an Avocado
Sweet Mini Red Bell Peppers
It was pretty good and marinated as-is...but...I LOVE Balsamic...so...
Wildtree Balsamic added here! This was a roller-coaster of Flavor and Nutrition!
I was proud with my attempt!

DeleteI love sprouts. I recently got into them because my roommate always has tons of them in the apartment. I love putting them in salads and on sandwiches.

DeleteI never thought of sprouting lentils! That looks scrumptious with the basalmic, avocados, peppers and tomatoes. Have you sprouted mung beans before?

ReplyDeleteI need to get a proper sprouting jar. I love sprouts and even have some seeds but it's a pain in the butt to drain and rinse them in a shaker cup.
ReplyDeleteI just use a small or larger wide mouth mason jar - those fit the sprouting caps I use.
