Sometimes when I stock my pantry I grab items that are on sale and then not really know what to do with the product. I have to admit corn grits isn't something I do a lot with but after I did this dish last night - I will be doing more in the future with this product. The corn grits I bought were Bob's Red Mill's Brand and YELLOW Corn Grits. Here's my recipe for this yummy comfort food.
1/2 C Yellow Corn Grits
2 Cups Water
2 Cups Water
1 C Broccoli (in Ninja/Food Processor)
2 T Nutritional Yeast
2 to 3 T Earth Balance

A few reasons I enjoy GoL's Green Super Food:
- One serving of Perfect Food Super Green Powder is equivalent to 140g of fresh grass juice.
- Excellent source of natural Vitamin A in the form of beta-carotene and a good source of natural Vitamin C.
- Contains spirulina that supports healthy immune function.†
- Contains algae and cereal grass juices that provide a natural source of alkalizing minerals.
- Select ingredients in Perfect Food Super Green Formula are produced through the Garden of Life proprietary Poten-Zyme® fermentation process to make the nutrients more available to the body.
- Includes a Probiotic Blend to support digestive health.†
- Supports healthy carbohydrate metabolism.†
- Great for those on low carbohydrate diets or people who are unable to eat enough green foods.
- Perfect Food comes in two easy-to-use forms: Powder and Caplets.
This looks delish and warm! I only recently started liking grits after living in the south for 16 years!
ReplyDeleteI do like the Yellow Corn much better than the instant white ones :) I'm partial to Bob's Red Mill's Products, too :)
DeleteLove, love, love this idea didn't know if I should pin it to breakfast or healthy eating. Followed you here from Healthy Happy Green & Natural link up.
ReplyDeleteI didn't even think of that! LOL I actually ate it for a snack last night...a great comfort food like mashed potatoes almost :)
Deletedelicious - we don't get grits here and so I would love to try them - cheesy broccoli sounds perfect way to eat them
ReplyDeleteWhere are you located again!?
DeleteYum, this looks wonderful! Such a creative way to enjoy broccoli!
ReplyDeleteI am thinking about trying it with salsa next and maybe some corn, too!
DeleteHi Jennifer,
ReplyDeleteWho doesn't love great comfort food! What a healthy and delicious dish! Thank you for sharing your Cheesy Corn Grits Broccoli with us at the Healthy, Happy, Green and Natural Party Blog Hop. I appreciate it!
I hope to be posting more comfort foods starting next month - Fall is a great time for those and winter, too!
DeleteIt looks colorful. I'm sure it tasted good too. I haven't made grits in quite some time, now that I think about it, I haven't made hominy either.
ReplyDeleteI'm REALLY excited about the yellow and green color combo in this dish! Another variation I want to try is adding red pepper flakes or even red bell peppers diced very finely for some red color in there, too! I have never made Hominy...might have to one of these days!
DeleteOH! PS...now that I have my Vitamix I haven't forgotten about my Ninja's...I mostly use my Ninja's as food processors now and that's what I used in this recipe to chop my Broccoli so finely.
