How To Catch Up On The Last 3 (Or More) Months?


I guess the BEST way is to just jump in, eh?

Yeah!  It's been WAY TOO LONG since my last post!  There has been a LOT going on and I really hope to share as much as I can with you!  I thought the best way to do it is in screenshots of 6 and go from there!  So with this first set of 6 photo shown above you can see that I have been trying my green thumb at more plants.  My co-worker has really been getting me into it.  The problem is...I can't keep up with buy more and more dirt and potting soil for the ones we are obtaining!

I was able to get my hair done and I have to get it done again soon!  I'm so horrible about being consistent with that!  YIKES!

Cricket is still doing well.  Riley and Charlie are aging by the day!  I have really seen a rapid change in both of them this past year.  Charlie is 19 and Riley is 18.

I have been able to locate some great new and new-to-me vegan items over the last several months in our travels!  I also put in an order online at some point, too!  This Daiya wasn't available to me locally with the 4 cheese style but I was able to find it online!


SWIRLS!  These Vegan Swirls receive a HUGE two thumbs up from me!  I absolutely LOVED them!  I can't wait to find them again!  She's Swiss Cheese I bought online, too, and whereas it wasn't the best vegan cheese slices I have ever had I was able to get them at a low price so I was happy I was able to try them on the cheap!  The Foodies Frittata was ok, too!  Very filling!  Again...found that online over at Vegan Essentials.  Same with the French Bistro product.  I have to fess up and say I wasn't a fan of that product but was super excited to try and was stoked it was one of the 'overseas' vegan products I was able to get my hands on!  The Mustaches were cute and cheesy but really small and easy to eat in one sitting!


We did take a trip to Indiana a while back - more on that in the near future!  

I have been finding some great random vegan deals at our new local Ollie's, too!  Annie's was on sale not too long ago!  There was another Vegan Mac I grabbed from Vegan Essentials that was pretty good and from Germany (I think).  And some more office plants!

And the other 5 photos are from Letchworth State Park!  We finally visited it this past fall!  I can't believe I had never been there before now!  We hope to go back in the spring or summer, too!  I really liked the visit!


Our mall is being ripped apart and the guys working on the building were going to trash all of the plants so my co-worker and I grabbed a bunch and tried to save them and propagate them.  Some are working well and others aren't.

In one of our Ohio trips I was able to visit Mustard Seed Market again and found more VioLife Vegan Cheeses which I really like!  And our local Tops has Enjoy Life Cookies!  YAY!

LOTS more on tap!  Just need to take it a little at a time!  Hope you haven't given up on me!

All Sorts of Updates ~ LONG Post Ahead!

I'm not quite sure where MARCH went?  It's been VERY BUSY for a March but at the same time I couldn't wait for April to get here.  Mostly because of the weather.  I'm SO OVER WINTER and ready for better temps! 

So as you can imagine, I'm WAY BEHIND on posting!  Here's the official warning...this will be a VERY LONG POST!  Possibly the longest post I have had to date!

There is a possibility I will be obtaining a few more vegan cookbooks over the next month so I better get up to snuff on that soon, eh?  Here is one from my last shipment.  Sweet Potato Soul from Jenne Clairborne.  I have thumbed thru it and already KNOW I need to try many of the recipes inside!  The photos are lovely!


Many of the photos in this post will be of foods I have been gnawing on or finding.  We have been taking a bunch of day trips the last month or two but I have been grabbing some filler in between our hauls.  I found these vegan burgers at Aldi.  I'm sad that the vegan line was a limited run but have been seeing some of them stay on the local level.  I try and grab them when I can to let them know there are buyers in our area!

I used some sprouted bread to make a simple lunch and/or dinner with this.

It seems like this next dish is something I had forever ago!  It was literally something I threw together...an accidentally vegan rice and quinoa packet...I threw in corn, black beans, green chilis, tomato, and garlic.  It was YUMMY.

I'm in the process of joining Zontas International on the local level and they have monthly lunch or dinners paired with their meetings.  They have been GREAT with veggie options.



 I usually opt out of the meal and go for the conversation in situations like those.  But they had Quinoa and Make Your Own Salad the one night and I was THRILLED!  They have a Summer Surprise Event each summer and you don't know what the details are until it happens.  One of the things someone suggested was to have a Vegan Meal such as a potluck and asked me for suggestions.  They thought it would be neat for the other members to try something new.  I will let you know if anything comes of it.

Here is a cheap, quick, easy, and breakfast I have out at a local restaurant.  Oatmeal with Blueberries, Pecans, and (sometimes) Brown Sugar!


And speaking of eating out...it was my birthday back on the 16th and DH, BIL, and I took a trip up to Buffalo and ate at The Pizza Plant.  I've blogged about some of their vegan options before but I was REALLY hungry for some of their Vegan Pizza (instead of trying something new, that is) so I got that and had PLENTY to bring home for leftovers! 

Oddly, this past weekend, we took a day trip back to Buffalo and the Pizza Plant and I grabbed another Vegan Pizza!  Oops!  I probably won't have it again for months or even a year!  The trip we took for our birthdays we did share an app...the vegan curry nachos!  The boys didn't even mind the vegan cheese!


One of my many finds the last couple of weeks was the Forager Project Cashewgurt LEMON.  I've been waiting to get my hands on this flavor and I finally found it.  And I have to say YUM YUM YUM!  It sort of reminds me of Lemon Meringue Pie...but BETTER!  This is certainly my FAVORITE FLAVOR so far!

In our day trips, we have been lucky to hit up a few places in Ohio a couple of times...and Buffalo area...twice.  Plus, Erie.  I've been VERY fortunate to have a couple of nice grocery hauls mixed in. 

More on that in this post and future posts - for sure!



With the first trip to Buffalo about 2 months ago when we went to the Indian Restaurant I stopped at a Halal Grocery Store that was right next door and found these little gems! 

These are called Chai Paratha.  They are the size of a big pancake but are sweet, savory, and contain chai spices. 

I read a website that said they are good for breakfast or with tea.  I did have them with tea once.  The other time I had them I ate them as a dessert with a Mango Chutney I made. 

They were totally yummy and I wish I had more!


One of the many blog posts I wish I would have done was one on how I recently cleaned my Excalibur Dehydrator.  But I'm sure there will be another day and time for that.  I hope to start using it again more. 

After I gave everything a good cleaning, I made these Raw Vegan Crackers.  I wasn't overly thrilled with the taste so I won't post it here until I have a better attempt after some tweaking.  They were a bit too salty for my liking.  As you can see I used several spices, Pumpkin Seeds, Sunflower Seeds, Chia Seeds, Flax Meal, etc.




With all of our running around, we have also had some RnR with the furkids.  It's rare if I can get a pic of all 3 of them at the same time but it happened this past weekend.

As for a furkid update - things have been ok.  I've been working with Riley's ongoing ear infections but that's nothing new.  I was finally able to get Cricket over to my parents for a playdate with Lexi.  Paco keep truckin' along, too!  I wouldn't be shocked if we had to adjust his meds again over the next couple of months for his ITP.  Charlie is aging by the day but still his feral self.  Age-wise we are thinking that he's about 18, Riley 16 or 17, Paco almost 7, and Cricket - about 5.


We take day trips because of the dogs.  We haven't been overnight somewhere in years other than fair week and that's the week they go to 'Uncle Jack's' as we call him. 

With Paco's ITP (Immune Issue) he rarely leaves the house unless he's going to the vet.

Cricket is still the leader of the pack.  Riley and Paco are followers.  When we lost Suzie to cancer there was a hole that is for sure.  When we got Cricket the flow was better because of her alpha-ness!  I know you can't tell by the pictures but I assure you that this little 6-pound wonder is a spitfire!



Like I said before - I'm still waiting for the weather to get warmer.  In the meantime, I have been enjoying some more soups I can easily make in my blender. 

This first one is a Black Bean Soup.  Because I waited a while to post it - I'm afraid I misplaced the recipe!  YIKES!  Sorry!  It was tasty!  And as you can see I used some homemade Cashew Sour Cream to mix in, too!

The 'red' is smoked paprika!  I can't get enough of Smoked Paprika these days!




This next soup I used Chickpeas as the based along with Coconut Milk and Tahini.  There is also Smoked Paprika, Garlic, Nutmeg, Onion, and Nutritional Yeast, too!

A couple weekends ago I went with my parents to an RV Show at the Chautauqua Mall in Lakewood, NY, and while we were there we stopped in to a few places.  One place we can't pass up when we are there is the one Kitchen Store.  It seems like we always find something.  The blue edges you see in this photo is a pasta maker type bowl.  It's supposed to 'nuke' your pasta quicker.  That is yet to be determined but it makes a nifty bowl, regardless!


I guess you can also see the dish here, too!  So far I have found that it doesn't really cut the pasta time but it could be because I have a low watt microwave. 

The dish is pretty sturdy/heavy-duty and of a good size.  I like that there are little ledges/handles on the sides, too!

I made a Garlic Dill Alfredo Sauce for these noodles.  It's a Pumpkin Seed base that I used here, too!  It was pretty good.  Of course, I topped it with Smoked Paprika!




I almost forgot to post a few selfies.  I'm a horrible selfie person.  This first one is from the RV Show at the mall.  I saw this hat and thought I would try it on.  I regret not buying it.  It went well with the jacket I was wearing, too!  As you can see - I don't wear make-up.  Yesterday, while I was at Walmart I noticed a "Wet & Wild" brand section that was clearly marked "Cruelty-Free" and "Vegan" in several places.  Not only on the individually packaged items but on the signs above each product.  I thought for the heck of it I would grab some.  It was CHEAP!  Probably the cheapest I saw in 3 isles of make-up!  I bought some foundation, concealer, and mascara.  I know I won't wear it often but when I do I know it will be vegan!



Here's another selfie I took back on International Women's Day.  I even wore purple to celebrate!

I feel that ever since I decided to go back to wearing my glasses it's added about 10 years on me!  I need to get my hair done, again!  YIKES!  I actually like this shirt I bought at Label Shopper several months ago!  I think it was only $7.  I wear it for work a lot and will probably wear it to some upcoming Zonta Meetings.  And speaking of meetings...I have a League of Women Voters Board Meeting today!  There are lots of things in the works and I will share more details about those projects soon!



Photos I enjoy sharing more are of this little girl!  Here's my adorable neice!  Trinity is going to be 10 months on Saturday!  I can't believe it!

My parents watch her about 3 times a week and they sent me this photo on my birthday!

Her hair is getting thicker.  She can pull herself up and stand but hasn't walked on her own, yet.  She hates wearing shoes.  I think I have taught her how to say "Nom Noms" and "Nom, Nom, Nom" when she eats!



I can't wait to take her rolling skating and ice skating!  I'm a terrible bowler but I can't wait to go with her.  My parents and I are already making plans for camping and fair week!

She's a fan of Justin Timberlake and Bruno Mars but REALLY doesn't like Taylor Swift (I can't say as I blame her). 

She already likes animals.

And I think her and I not only have an understanding of each other but we also get a kick out of each other, too!



This photo was taken yesterday.  She had an Easter Dress eventho my sister and her husband didn't take her to church.  Her husband is Catholic so that was pretty shocking they didn't go but I guess they had some churchgoers that were sick and didn't want her picking it up.  (Again, I don't blame them!)

My sister, her DH, and Trinnie are going on vacation later this month.  My parents and I were trying to go, too, but it didn't work out.  They are going to Charleston, South Carolina for about a week and a half.  As much as I wanted to go, I can't take that much time off from work and leave Paco for that long.  Dale said he would stay home but the planning process wasn't in our favor - nor were the prices!


I was, however, able to take last Thursday off and we took another day trip to Ohio.  We went back to Mustard Seed Market and this time we grabbed something at the cafe before we left.  Dale got a Strawberry, Orange Juice, Banana Smoothie and I got this juice.  They call it Waldorf Hysteria.  It contains Fresh Juiced Carrots, Apple Juice, Celery, and Mint. 

I ended up really liking it and the mint helped with the aftertaste, too!  The photo doesn't really do it justice.

My mom and I are already planning on taking my juicer to camp this summer!  So I hope to have more to report on the juicing front, soon, too!



And...last but not least...this MONSTER MEAL from our trip to Buffalo on Friday!

We went to Amy's Place for brunch!  It's been YEARS since I have been there!  They have LOTS of vegan options including what you see here!

It's Lentils and Broccoli, Rye Toast with Vegan Butter, Breakfast Potatoes, and Seasoned Tofu!  I added a little Ketchup and Frank's Hot Sauce and it was pretty amazing!  It made me wonder why I don't make Lentils on a lazy Sunday and use them throughout the week!  I need to start doing that!  I'll stop right there since this post was LONG enough but I have LOTS on tap so make sure you check back often!

Collin Raye Concert at the Warren County Fair

This week I will be posting about the concerts that took place at this years Warren County Fair!

The Tuesday of Fair was Collin Raye.  His stop at our fair was part of his BIG 25 Tour.  To see his hits and other discography CLICK HERE.

I may not be the biggest country music fan but I appreciate musicians and artists from all genres.

I worked mostly backstage that night and didn't see each song that was performed but it was a FUN night that is for sure!  Here is a photo of him and I.  He was super nice!



 Here is another photo from the one side of the stage.  The sound was great in the building that night.
He sang a lot of his hits and some tribute and cover songs from some of the artists he held dear such as Glenn Frey and Merle Haggard.

Many weddings that took place in the 90s featured one or more of Collin Raye's songs that is for sure.

He's a great storyteller as well!  A very pleasant guy with an interesting stage presence.

Creamy Hemp Italian Dressing, Pineapple Vanilla Smoothie, Cacao Pear Smoothie, and Selfie Day

Happy Wednesday LOVELIES!  I have some tasty items to share with you today!  First up...take a look at the salad I had last night!  It contained Iceberg Lettuce Mix - it was the only lettuce I had on hand at the moment - as well as - fresh sugar snap peas, carrot slivers, red cabbage slivers, corn strips, and I topped it with Creamy Hemp Italian Dressing (recipe below) and sprinkled smoked paprika on top!  

Creamy Hemp Italian Dressing

1/2 C Hemp Seeds
1/2 C Apple Cider Vinegar
1/2 C Lemon Juice
2 T Wildtree Italian Seasoning
1 T Wildtree Garlic Galore
Pinch Black Himalayan Sea Salt

2 C Pineapple
1 C Almond Milk
1 Scoop Garden of Life Vanilla Flavored Raw Protein & Greens

Easy Peasy...RIGHT?  Yup!

Playing Catch Up!

I found this cute meme on Instagram the other day and reposted and commented...This is my Monday Face...and Tuesday Face...and Wednesday Face...lol...YEAH...it's been a rough few weeks or months but I am trying to kick the attitude and start a NEW!

Eventho it's been a very mild winter here in the snowbelt I'm looking forward to spring regardless!  So far today we had between a foot or two of snow fall.  I was shoveling my sidewalk and driveway and the city plow came thru and plowed me back in.  Nice!  I'm typing that with much sarcastically - I don't know if you picked up on that!


The furkids are doing well!  Cricket is a 'crazy lady' that is what we call her sometimes but she's also a sweet pea and darling girl!  She puts so much life into our home.  She has a devilish side, too!  She likes to torment her brothers.  Riley has a soft side for her most times whereas Paco is too polite to do anything to snap back and I usually have to stop Cricket from picking on Paco.  Paco is so funny - he actually waits in line to drink from the water bowl in the living room at night.  He lets Cricket and Riley go first and he waits until last to lap up the water!



Paco is doing really well considering all of his medical issues.  He's been on his same meds for over a year now and his blood work is consistently where it should be.  He pees a lot but I would rather him do that than not be with us.  He's still sweet as ever!  And he's so strong to deal with everything, too!  He's plumped up from the meds but just adds to his character.  



I took this photo on a sunnier day than today and just had not posted it yet.  I'm still wearing my glasses and most likely will just continue to.  I think it makes me look older but I don't really care.  I know in the past no one could believe I was 36 but maybe now I will start looking my age anyways.  It is what it is, right!?

Work has been rough but I'm still plugging along.  I've been fairly uninspired in the kitchen as of late and going back to some comfort foods, cheap foods, fast foods, and good old stand by's!


I've been throwing a lot of dishes together much like this veggie curry here.

I've been re-organizing my tea collection and re-visiting some old favorites.

I have been able to spend a good amount of time with my parents the last several months.  They went to Aruba last month.  They LOVED it.  My sister had a rough weekend because she lost one of her furkids to cancer.


I'm still VERY MUCH into the Essential Oils.  My parents have gotten into them, too!  My sister has been buying some stuff online at PipingRock.com so I thought we would try it at as well.  So my parents and I went in on it together and they bought an Essential Oil Starter Kit with about 14 different oils.  I had at least half of them so I didn't get one of the kits I opted for 4 individual oils instead.

I decided to try 2 of their blends.  The Mental Clarity and the Stress Relief blends and I have them at work.  I have tried and like both of them.

Then I grabbed some Grapefruit Oil and Pine Needle Oil.  Those were two of the ones on my results sheet I received before Christmas.  I really like both of these, too!  I will say that the Pine Needle surprised me.  I thought it was going to be way too 'manly' and pungent but it's 'just right'.

I really like Piping Rock so far!  Their prices are quite a bit lower than many other sites I have seen.  I've only gotten their oils but I intend to make a purchase down the road that contains some of their nuts, seeds, snacks, etc.

Cricket, Hair, and Such

TGIF!  Just doing a quick post for today as I plan to switch gears starting next week post-Vegan MoFo.  Remember you can still sign up for the MoFo Off Season Community just click on the first graphic at the top of my sidebar for full details.  Today I thought I would share some photos of Cricket.  These were taken a few weeks ago when we are camping.  I brought her the one day and she really loved hanging out!

That first photo - I swear she's going to start speaking English or something - look at the LOOK on her face!  In the 2nd and 3rd photos she was looking out the window.  And the 4th one was one of the days I took her to work.  She walks around the office like she owns the place - I swear!  I will have near future posts and updates on the other furkids very soon!  Thanks to those of you who always ask about Paco (who has ongoing immune issues)

Here's a silly photo of me - a selfie - after getting my hair done.  It was LONG overdue.

Tonight is my husband's 25th High School Reunion.  I have some ideas as to how the events might go down but I will save it for a post next week!

It's sure to be a brew-haha!

The weather is REALLY cooling down RAPIDLY.  I will for-sure have to wear layers tonight to the reunion.


This week has been a week of QUICK MEALS, Convenience Items, and Comfort Foods.  Next week I will be changing that.  My goal is to start in with more warming soups next week and I want to get back to veganizing world foods, too!

This last photo is of one of the vegan white sauces I made for pasta this week.  Its base is Pine Nuts.  It was quite good but still me I don't think I wrote down the recipe!  Eeeeek!

I'm NOT a Girlie Girl...but...

I'm declaring today Selfie Day here at my blog...mostly because I am still trying to plug away at my vacation pictures and blogging about the trip we took to West Palm Beach and The Breakers! 

I'm NOT a Girlie-Girl...but...at The Breakers I would have been tremendously out of place if I didn't wear skirts and dresses. 

I did get a new wardrobe out of it so that was cool and now with my new position at work I just might get more use out of the clothes I bought for the trip!


In the first photo I'm on the Terrace of the Flagler Club Level at The Breakers in West Palm Beach.  When I first bought the dress I thought of it as one of those 70's Go-Go Dresses but it ended up being very comfy and I was pretty happy with the purchase.

In the 2nd photo you can see I was a little red from sun burn.  3 years ago I would NOT have worn a shirt without sleeves.  Since I lost the weight I feel a little bit better about it.  I was standing in front of this HUGE Aloe-like plant that was in the front and off to the side of The Breakers.  I probably still have a quazi-hippie thing going on here with this outfit but that is more what I am used to than fancy dresses.

This photo didn't turn out very good but at least you can see another one of the dresses I bought for the trip that I ended up really liking.  My hair in this photo, on the other hand, was pulled back because of all the wind that night.  This dress was a thicker material than the others but I ended up really liking it and I do love the shades of blue!

You will probably be seeing me wear those shoes, more, too!  I bought them on sale for like $6 or $7 dollar just before we left.  They are simple but still outside my comfort zone as far as shoes are concerned.  And YES...all of my shoes are NOT made of leather.


And here's the photo of me drinking FRESH coconut water straight from the coconut!  I know it sounds crazy but it was one of my many mini goals while we were there.

It was SO good!

This photo was taken at The Surf Break (Hut) near the pools - I have blogged about that area of The Breakers prior to this blog post.  Be sure to scroll down for more photos from the trip and from that specific area of The Breakers!

Funny fish face or kissy-face?  Either way...this is me being weird outside of The Breakers during one of the walks we took one morning. 

I believe this was one of the few times I wore capris pants with a dress shirt (blouse).  The  top was white - and I don't normally wear white - but it worked, I guess.  The shirt had some beads and sequence at the top around the neck. I was sitting in front of one of their many gardens.  Nearby was a cute little salamander but I wasn't able to get him the photo..sneaky devil!
And finally this last photo was of me in the last dress I bought before leaving.  I normally don't like big flower prints nor do I like the color pink...pair that with the simple fact it was a dress and it already had 3 strikes against me.  It wasn't bad, tho.  I did like it from the waist down more than the top but it worked for the trip. 

One dress I didn't post here that I REALLY liked was the black and red dress I got but I didn't get a good photo of me in it.  I told hubby that we would just have to start doing more things that warrant me wearing dresses! LOL

Salads & Sass

Yesterday Hubby and I did some shopping for our upcoming trip and did a "Linner" afterwards.  I have to say I was overly impressed with the Make Your Own Salad option they added to the menu and I couldn't pass it up!  I decided to do mixed greens, avocado, mushrooms, roasted red peppers, cranberries, broccoli, pecans, and cherry tomatoes with a Sun Dried Tomato Balsamic.  It was AWESOME!

I'm not going to lie - I can't wait until we get there - for the pure and simple fact that the temperatures will be significantly warmer!  Everything else is just a PLUS.  I'm already trying to research vegan options when we are on site.  There are a few but the prices where we will be staying are out of this world.  After all it IS a 5 start hotel.  I have never stayed at a 5 start hotel and I highly doubt I will again!  I'm just NOT that type of girl!

Eventho I didn't purchase this one - now I am wondering if I should have. I kind of like it.  Which is FUNNY because I don't generally wear dresses!

The one I bought I will NOT post YET but will after I wear it in sunny Florida!

I now have 3 dresses, 3 shirts, a long skirt, a short skirt, and some capris I will be bringing which is a bit more than I need but maybe I will be in the mood for a wardrobe change in the middle of the day! HA!

I will be completely out of my realm - but - you have to do that every once and while to keep things interesting, right!?
