HUGE Salad of the Day, Sprouts Are Done, and Marinated Sprout Salad

 I ended up doing a HUGE salad last night for dinner!  I do LOVE creative salads!  The first picture above you can see it's stand alone - all mixed up - and the second one I took before 'tossing' so you can see the ingredients better (other than the lettuce, that is).  What did I use in this salad?
 Well, let me tell  you!
I used Petite Oak, Gem, and Tango Lettuces, Zima Tomatoes, Sweet Mini Red and Yellow Peppers, Vegan Won Ton Strips, and Organic Vegan Ranch Dressing.

Had I had some handy - I would of probably added some Almonds and I forgot to put Hemp Seeds on it!

This totally hit the spot!  I LOVED this salad in more ways than I can express!

 In other news...
My Lentil Sprouts are finished sprouting!  YAY!  I think they turned out FAB this time around.  I saved some to used on a veggie burger in the very near future.  But I also made a Marinated Sprouted Salad.  In the photo above you can see it naked.

This Salad contains...
Sprouted Lentils
Zima Tomatoes
1/4 of an Avocado
Sweet Mini Red Bell Peppers

It was pretty good and marinated as-is...but...I LOVE Balsamic...so...

Wildtree Balsamic added here!  This was a roller-coaster of Flavor and Nutrition!

I was proud with my attempt!

Vegan Veggie Spinach Alfredo Topped Ravioli & Tabouli Salad & Tabouli Salad Sandwiches

 Last night I made this Ravioli.  I've been hungry for Ravioli since dropping dairy from my vegetarian diet.  I ended up ordering some Garlic & Veggie Stuff Ravioli online and topped it with several things I had around the house.  I used Chreese Alfredo Sauce but added more almond milk to it than it required.  I simmered that in with Spinach and Mixed Veggies including: Carrots, Potato, Corn, Peas, and Lima Beans.  It was quiet good.  It wasn't overly seasoned and I LOVE seasonings.  I did use a little bit of Garlic Grapeseed Oil within the mixture and next time I might had some onion and/or chives and more Garlic.
 I also worked ahead last night and made my lunch for today and will have plenty leftover for the next day or two or more.  I cheat.  I use a box mix for Tabouli!  That's what this is.  I just added water, Garlic Grapeseed Oil, Lemon Juice, and Zima Tomatoes. I like this stand alone but also put it in wraps or on top or IN tossed salads...as well as...
 Sandwiches!  So today I'm having Tabouli Salad Sanwiches and they are darn tasty!  Between the Lemon Juice, Mint, and Zima Tomatoes - I think that flavor combo is my favorite part!
Yes!  I can be messy but it's OH SO GOOD!  And Good FOR you! 

Smiles, Savings, & Sprouts!

 This was my husband's fortune in his fortune cookie the other day!  It cracked us up!  Immediately we thought of Mike Meyers' LOVE GURU.
 If you read my post from yesterday you will see I went shopping!  Sure I spent some - but I also saved!  I found these babies at our local Big Lots!  I love finding random goodies there!
 Like I said I started sprouting again and here is a pic of the Lentils I am sprouting!  More coming soon on these and what I will do with them!
 And if you have been to my blog before you know I have been posting a lot about my cats and dogs!  Well, here are some more pics of my pups!  The top two are Suzie and Riley.  They are BUDS!!!
 And here is Senor Paco!  This was taken Sunday Night...he totally did this himself.  He sure knows how to bundle up!
 Okay...more produce!  These are from Sam's Club.  I bought 3 pounds for $2.99!  OMG!  I LOVE these Zima Tomatoes!
I bought 3 different kinds of Granola at Big Lots the other day!  This was one of them!  All 3 I bought were free of animal products - thus being - VEGAN!

Like I said...I have LOTS to post!  So stay tuned!  These are just a few of the many things that have made me smile lately, the sprouting I have been up to, and the savings I have found!
