Yesterday I hinted at something that I have tried lately and LOVED and will be eating a lot of until I run out of the ingredients. That is Raw Vegan Tacos. I grabbed Romaine Hearts, Sun Dried Tomatoes, Guacamole (because it was cheaper than Avocados), and Cauliflower at a little mom and pop shop and I already had some Coconut Aminos at the office.
I marinated the Cauliflower in the Coconut Aminos and used it as the bottom layer along with the Sun Dried Tomatoes and topped it with Guac! I have to say it was pretty awesome!
They are messy but I don't care. The Guac sort of helps with the mess tho.
I will be doing variations of these in the near future - for sure!
I have been saying that my food efforts have been pretty weird as of late. I either throw something together at the office, on the road, or in the camper.
We are having some issues with our house and I haven't been able to cook there.
This 2nd photo is something I threw together at my parents house. They didn't have much that was vegan in their house and I didn't know prior to stopping by that I would be eating there. I made up some Mac and added stewed tomatoes! I threw some Earth Balance on there, too! It wasn't too shabby!
There has been a LOT going on the last several months and I wasn't going to mention it on the blog but I feel like I should.
On of the MANY things we have been stressing about is the furkid situation.
In the past month ALL of our furkids have been at the vet as least once. Charlie - our 17 year old feral cat - was acting weird and I thought he had a stroke but it was a really wicked double ear infection. We also found out he has kidney failure.
After treating the ear infections we decided to switch his food to a Kidney Diet to help him with that as long as we can. Since he's a really wild (feral-like) cat and always has been we don't want to stress him more than we have to by taking him to the vet PLUS there has to be 2 vets there to deal with him.
Moving on to the dogs - Cricket (pictured above) had to go in for a check-up and shots. Riley had to go in for the same - and he had a double ear infection, too. He has always had Chronic Ear Infections so we are used to it. However, this time around they tried a new med on him and it seemed to work well. He had to go in 3 times. Then there is sweet Paco. Oh...sweet Paco! That poor guy! He's had such a hard time with everything but he's a fighter!
I had to take Paco in for Kennel Cough - it's the only thing we give him - up the nose - we don't vaccinate him otherwise because of his immune issues. Then a few weeks later we found out he caught something from the kennel so we treated that. Then his nose started bleeding a little bit and we had him in twice for that. After finding something on X-Rays we had to decide what to do moving forward. We are still trying to decide. He's be in about 4 times already. They found something in his nasal passage. It's either something that he sniffed up and got stuck or it's cancer. Knowing how hard he has has it with other issues his whole life all I can think of is that it's cancer. GOD! I hope it isn't. I think we have the choice made - and that is to have our vet go in and do exploratory surgery and see if she can remove the thing that showed up on the X-Rays. But I;m afraid because of his immune issues. Because he has ITP/IMHA that means he might not clot or might clot weird and it could kill him. Also - if the vet can't remove it - we can't really do cancer treatments because of his immune issues. From what I have seen about Nose Cancer in Dogs it will grow and morph his face and/or cause seizures. It seems like a lose-lose situation. Our vet was on vacation so I need to call her back to see how we are going to go about this. In the meantime every couple of days he has a slight bloody nose. We have been treating it with Epinephrine. These vet bills have been a lot to handle all at once in addition to all of the other stuff we have been facing the last several months. But those stories I will save for another day.

Zesty Hummus Dressing
Sorry I didn't post a 2nd time like I said I would yesterday. I have been having some glitches with blogger the last couple of days. I'm actually typing this in HTML now because it's the only way the editor will let me create a new post. I apologize if the last couple of posts look funky.
Yesterday was really gloomy and rainy and by the end of the day I just didn't feel like doing anything. I didn't even know what I wanted to eat. I had this simple salad. I decided to take some hummus and make it into a dressing. It was a success! Check out what I threw in my blender and used on my salad...
1/4 C Hummus (I used Trader Joe's Red Pepper Hummus)
1 t Dijon Mustard
3 T Lemon Juice
2 T Minced Garlic
2 t Maple Syrup
Handful of Nutritional Yeast
Handful of Hemp Seeds
Squirt of Coconut Aminos
Splash of Pumpkin Oil
Water as needed

Goals, Pili Nut Butter Sauce & Rice, and Blueberry Vanilla Smoothie
Last week I was able to hit up all of my goals but I only did Yoga once. This week I want to shoot for at least 2 days of Yoga. Other goals this week include...Dehydrator Creations...at least 2 of them, at least 2 to 3 product reviews on my blogs/sites that I write for, take some fall photos before it's too late, and start something new. WHAT? Well, that's yet to be determined...at the very minimum it's at least starting SOMETHING new...ANYTHING!
I think tonight I need some stress relief. Perhaps tonight is the night I push myself for some yoga! I really need to get caught up on some cleaning, too, but maybe I can get a few things going and do Yoga in between!
Dinner last night was flavorful and fun and I hope to do it again soon! Or some variation of this. I decided to do some white rice with a creative sauce. It was a Pili Nut Butter Sauce. Here is the recipe I threw together...
1/4 C Coconut Aminos
1/4 C Pili Nut Butter
2 T Coconut Vinegar
1 T Hemp Oil
1 T Hot Sauce
This morning I had a simple smoothie...
1 C Almond Milk
1 Scoop GoL's Vanilla Protein
1/2 C Frozen Blueberries
1 T GoL's Flax & Fruit Antioxidant Blend
I loved the color but must say I wasn't very organized with my mason jars so I had to use a leftover glass pickle jar to transport my morning smoothie to work! LOL

Vegan MoFo ~ Creamy & Sweet Avocado Dressing, Birthday Wishes, Hot & Sweet Stir Fry
Last Night was BUSY for a Monday Night!
I got out of work a bit late and Hubby wanted to try some food from our new local Sheetz. I went over and got a LARGE salad with no dressing. When I got home I made my own dressing in my Ninja! It turned out WONDERFUL! The Salad was very tasty! The ingredients were surprisingly fresh and the people at the shop were really nice! The Salad was a good sized one, too!
For the Dressing here is what I did...
1 Avocado
Splash of Wildtree Tuscan Dipping Oil
1 T Minced Garlic
1 T Agave Nectar
1/4 C Water
Splash of Lemon Juice
I REALLY REALLY LOVED This Dressing! It was creamy! It was Sweet! It was Garlicky! And a tad lemony! I would definitely do this again!
After Dinner I went over to visit my Mom and Dad. My Dad's Birthday was Sunday and I wanted to give him a card and a little gift I picked up over the weekend. If you read my post yesterday - it was a handmade wooden single wine bottle holder I thought would look cute on their kitchen table. He seemed to really like it. He also liked the card. I soaked the white lace in baby blue powdered chalk and water and dried. On the inside I hand wrote "Birthday Wishes" and Love Dale, Jennifer, & The Fur Grand Kids!
I stayed for about an hour and a half and everyone started to get sleepy so I left. I was going to try and stop at Walmart but decided to drive passed it and lost the urge to stop. I didn't really have a reason to stop really and it was about 10pm.
When I got home I painted another layer on a picture frame I am 'tinkering around' with.and set it aside to dry.
I then played with the dogs for a bit and then went to the kitchen to do a quick stir fry which was supposed to be for lunch today but it will be for dinner instead.
Here's a photo of it. And here is what is in this dish:
1/2 C Rice
1 C Red Pepper/Yellow Pepper/Onion (Frozen)
1/2 C Peas
Handful Almonds
1 tea Wildtree Everything Blend
2 T Coconut Secret Coconut Aminos
1 tea Apple Cider Vinegar
1 tea Hot Sauce
1 tea Agave Nectar
I like the 'yin and yang' of the hot and sweet here. The peas were also frozen and 'popped' in your mouth real nice! The only bad part...is now I am officially out of Coconut Aminos...bummer!
