Manic Monday & Weekend Food

I'm optimistic this week will be better than last week.  That's all we can really, do, right?  Talk ourselves into a better week!?  Anyhow...I have LOTS to share with you today!  Lots of RANDOM Stuff but still - it's STUFF - at that!

I ended up LOVING the Peanut Butter Company's Dark Chocolate Dreams Peanut Butter and when I went to Tops on Saturday THEY had Mighty Maple so I got that one!  And BOY oh BOY is it GOOD!  I put it on toast yesterday for Breakfast and it was YUMMY!  I also did Vegan Cheesy Grits with Daiya Cheddar - those were pretty awesome, too!  I found Potato Cakes at Aldi's a while back and they didn't have any animal ingredients in them!  Woot!  I did two of those in a frying pan with some Earth Balance and that was my LARGE Sunday Breakfast.  I'm not usually a Breakfast person but I am REALLY trying to be because I know how important it is!  I made a Potato Cake for my husband and that is why I used Earth Balance instead of Grapeseed Oil.  I am out of my Nautral Flavor and I don't think he would have liked the Garlic or the Basil Pesto with this!  I also have a little bit of the Discontinued Chili left...I'll have to savor it!  I might have to try and make my own.  I know it won't be AS good but it will be an option to my flavored Grapeseed Oils.

Last Week I did a few Ethiopian Dishes and I enjoyed them both.  This week I am going to try a few things from Thailand.  I do like Thai Foods but haven't MADE very many...YET.

Friday Night I was waiting for my Husband's Dinner to be done (in the oven) and while I was waiting I decided to do some "Thai Curry Chickpeas".

They turned out pretty awesome, if I do say so myself!  I would 'chalk this one up' as one I would do over and over again!

Here is what I did for these Chickpeas!

12 to 14 ounces of Chickpeas
1/2 C of Cilantro or Coriander (I used Cilantro)
1/4 C Lemon Juice
1/4 C of Onion & Chive Blend (Wildtree)
1 T Garlic Galore (Wildtree)
1/2 t Cayenne
1/2 t Cumin
1/2 t Ground Coriander
2 T Braggs Liquid Aminos
2 T Garlic Grapeseed Oil
4 T Coconut Milk

Dog Break!  Yes!  I have more food in this post but I have to add some pics from the furkids this weekend, too!  Eventho it was SUNNY it was COLD and WET and all-around questionable weather!  At least we didn't get the FEET of snow they were calling for!  

Here is Riley and Suzie.  If you zoom in you might see that Riley was sticking his tongue out.  Suzie was barking at my husband.  He likes to mess with them sometimes.  He'll talk and she'll bark and half howl back.

I ended up finding some Tofurky items at Tops, too!  I will post more about those on Midweek Munchies.  But I did jump right in with a dish last night for dinner.  It was a Saute of Sorts.  

2 Carrots
2 Celery Stalks
A Random Amount of Green Beans
1/4 - 1/3 C Onion & Chive Blend (Wildtree)
1 Tofurky Italian Sausages (the ones with Sun-Dried Tomatoes) 
2 T Garlic Grapeseed Oil

This is what it ended up looking like when it was done!  I decided to do some Brown Rice to put underneath.  This is WAY different than most of the foods I have been making flavor-wise.  I think next time I would add Potatoes and FOR SURE Some Balsamic.  It's pretty good the way it is here but I liked it even more when I tossed and mixed everything together!  I also added some Vegan Parmesan Cheese on top, too!

I stepped outside my comfort zone on this one and it was a pretty good attempt!

This was a rare capture!  I just happened to have my iPhone on me and him on my lap FACING me and somewhat vegging-out for the afternoon on Saturday!

I'm so excited I got this pic of him.  He looks so serious...it makes me laugh!  Of course shortly after this photo he was back up and running around!

I warned you I had a lot to post today!  Here is ANOTHER thing I did Last Night!

It's a Mediterranean Walnut Sauce!  Again, VERY different from anything I have ever tried doing before but I was very excited about it!

I used one of my Ninja Blenders for this and it worked awesomely!

For this sauce I used...

1/2 C Walnuts
1 C Parsley
2 T Garlic Grapeseed Oil
1 T Tomato Paste
3 Cloves Garlic
1/4-1/2 C Water to thin

I used half of this sauce to top Bowtie Pasta which you see here and I am going to use the other half to top Veggies, I think.  So...I think that is about it for now but I hope to do my Meal Planning later today and need to do another dish for tomorrow...so stay tuned for additional posts!

Granola Mix, Ethiopian Potatoes, Radish Sprouts, and Such!

 I don't usually add 'milk' to my Granola.  I like to eat it dry.  But I have a bunch of Coconut Milk I have to use and thought I would try it yesterday.  I have also been buying and mixing Granola like it's 'The End Times' so I decided to mix one of the Peanut Butter Granola's in with a Dark Chocolate Granola AND add a bit of Grape Nuts into the mix and here is what I came up with!  It was quite nice.  Super filling and CRAZY nutritious! 
 Ethiopian Potato Salad.  Yup!  I've started to make-good on my personal goals and make foods from other parts of the world.  This is my first attempt!  Here's what it has - super easy - full of flavor!

1 pound of potatoes (cooked)
2 T Basil Pesto Grapeseed Oil
Wildtree Onion & Chive Blend to taste (I used maybe 3 T)
1-2 T Lemon Juice
Parsley to your liking
Jalapeno (Optional)
 Last night I really didn't know what to have for dinner and I needed to use some sprouts as well as one of my Avocados!  So I did an Avocado Mash on top of an "everything" bagel.  It's hard to see here but I added a few shakes of Wildtree Chipotle Hot Sauce inbetween that layer and the sprouts.  For the Sprouts I used Radish Sprouts!  I was very pleased with this portion of my meal - it was super awesome!
Yup!  I got home any my Radish Sprouts were ready!  Check these babies out!  Aren't they crazy-sexy-cool?

I decided to put my iPhone Macro to the test and I was glad I did.

I ended up finding a place online to order sprouts that accepts PayPal and placed a small order this morning.  I think I will save that post for when they come in!
Here's another look at my newly sprouted Radish Sprouts.

A few nutritional Benefits include: It is also a good source of Vitamin A, Thiamin, Riboflavin, Pantothenic Acid, Calcium, Iron and Copper, and a very good source of Vitamin C, Niacin, Vitamin B6, Folate, Magnesium, Phosphorus and Manganese.

Bowtie Pasta Jobber

This past weekend I needed to make a quick meal in minutes and had little ingredients to do much with!  I ended up with this little Bow Tie Pasta Jobber!

I had some Tomato Pasta Bow Ties and threw in...
Wildtree Chili Grapseed Oil
Wildtree Onion & Chive Blend
Stewed Tomatoes (with Garlic and Basil)
Corn
Hemp Hearts

Surprisingly, it was more fantastic than I ever thought it could be!

Or maybe I was just that hungry!

Either way...I was VERY happy!

Wildwood Sprouted Tofu & My Scrambled Tofu Adventures

 I don't LOVE tofu but I don't hate it either.  I seem to enjoy the dishes that other people make but I don't have much luck with tofu dishes unless it's a scramble.  This past weekend I bought this Sprouted Tofu for the first time and I must say I think it's among my favorite tofus!  It's between this one and SoyBoy!  Check out all the nutritional value - not only for Tofu - but SPROUTED Tofu!  Many of you know I'm a Sprouting fan anyhow, so this was fitting!  I also found some additional recipes I might try down the road - on their company website!
But here is my LARGE Scramble this week!  It made to HUGE Breakfasts!

In addition to the Tofu here is what I added:
1/2 can of Spinach
4 T Medium Salsa
3 to 4 T Nutritional Yeast
2 T Wildtree Chili Grapeseed Oil
a few pinches of Wildtree Onion & Chive Blend

It was REALLY tasty!

Cheesy Veggie Rice Casserole



 Above you will see this casserole being assembled - before baking - without the 'sauce'.
In the above you will see:
Broccoli
Yellow & Red Bell Peppers
Celery
Chickpeas
Basmati Rice
Slivered Almonds
(tossed in some Wildtree Onion & Chive and Garlic Galore)

Here you can see it after I combined everything and baked it.

What I did for the 'cheesy sauce' was the following...

1 1/4 C Soy Milk
1/2 C Nutritional Yeast
2-3 teas Cornstarch
Splash of Lemon Juice
1 teas Wildtree Onion & Chive Blend
Squirt of Mustard
Pinch Cayenne Pepper
1 T Tahini
Wildtree Lemon Pepper to Taste

I made this to lunches and will certainly try it this way - be itself - first - but might add some or all of the following for the left overs or future batches:

Tofu
Tempeh Bacon
Crumbles
Corn and/or Peas

I was also thinking about using as a filling for pitas and wraps, possibly.

Chickpea Salad Sandwich Filling

I apologize for the quality of this photo.  It was taken with my iPhone under Florescent lighting.  I brought this for lunch today.  I made it last night.  It's a filling for a Chickpea Salad Sandwich.  A vegan alternative to Egg Salad.

What went into this dish?

1 can of Chickpeas
1/3 C of Veganese (Mayo Alternative)
2 tea Yellow Mustard
2 T Chopped Relish/Pickles
1 Rib of Celery, Chopped
1 tea Wildtree Onion & Chive Blend
 
I'm really wanting to eat this now but am trying to wait a little closer to lunch!

Casablanca Cous Cous

 Last Night I made Casablanca Cous Cous.  I found a recipe online and tweaked it based on what I had handy.  I figured you could serve this two ways.  Above I did the Cous Cous on the bottom with the mixture on top and below you can see I mixed all of it together.  I've tried the first one - last night - and mixed the rest and will have it for lunch and dinner over the next few days!
This dish had:
Cous Cous
Wildtree Grapeseed Oil
Wildtree Lemon Pepper
Sliced Carrots
Chopped Celery
Cubed Tofu
Tomato Sauce
Curry & Cayenne to taste
Chickpeas
Mushrooms
Wildtree Onion & Chive Blend

I'm pretty tickled with myself for this attempt!
