I know I have posts a LOT of vegan cheese sauces, dips, spreads, etc over the years and there are many I like for many different reasons. I also seems like I do them a little different each time I use them or make them.
Today I threw together another vegan cheese sauce and absolutely LOVED it! I don't know if there has been another attempt I have enjoyed this much in a long time - if ever! Here are a few photos of the Mac & Cheese I covered it in!
All in a blender...
1 C + 1 Handful Cashews, Soaked
1 C Water
1 T Garlic Tahini
3 Handfuls of Nutritional Yeast
1 T Lemon Juice (more to taste)
2 Squirts Yellow Mustard
1/2 t Turmeric
1 T Dried Minced Onion
Black Himalayan Sea Salt (to taste)
I think the Garlic Tahini addition really took it to the next level and helped with the over all creaminess!
It also kept the same creamy consistency and didn't dry out like some of the other cashew sauces I have done tend to do.
I had some left over and used it to dip pretzels in! I didn't have any corn chips in the house or I would have try it on them, too!
I know I will continue to try different combos but I have to say - for the foreseeable future - this is my new favorite vegan cheese sauce!
I can't wait to try it on a baked potato! Another pair I can think of is on top of cooked broccoli!
I can't wait to try and make this again!

Multi-Purpose Vegan Cheese Sauce, Raw Vegan Veggie Burgers, Trip to Labyrinth, and Gabby Update
Yes...I need to start doing a little catch up once again! I was going to put this recipe on my blog last week but the week got away from me. Sorry about that. Last week I made this Vegan Mac & Cheese. I used Orgran Vegetable Noodles but the real flavor was in the sauce. Here's what I did for this sauce...
1 C Almond Milk
1 Yellow Onion
3/4 C Nutritional Yeast
1 Yellow (or Orange) Bell Pepper
3 T Cashews
1 T Tahini
1 tea Wildtree Garlic Galore
1/4 tea Turmeric
It was reminiscent of a "Sharper" type tasting cheese.
It made more than I was ready to use for the Mac & Cheese so I added about a teaspoon of Red Jalapeno Powder and used the rest as a Nacho Cheese Sauce for Tortillas.
I would make this again! I think this is a good Multi-Purpose Vegan Cheese Base of sorts.
Last night I made Raw Vegan Burgers in my Excalibur. For years I have had a hard time making veggie burgers at home because they have always fell apart. These worked nicely in the Dehydrator! I'm quite excited! Here's what's in these...
1.5 C Almonds
1.5 C Pecans
3 Handfuls of Baby Carrots
1 Onion
1/4 C Parsley
1/4 C Lemon Juice
1 tea Curry Powder
I had a slew of Baby Carrots I NEEDED to use SOON and thought this might be a good way to try it. Again...I think this is a neat base to play with and I would like to try them again with some spicy ingredients as well as maybe some corn and other veggies such as broccoli, peppers, maybe some beans or sprouts, even.
It was a weird weekend and I am sure I will share more of it as this week progresses. One of the BAD things that happened is I whacked my 'pinky toe' on DH's Recliner and my foot is turning BLACK. OMG...it hurts! And with this ongoing COLD it sure isn't helping it!
On a GOOD side - I was able to visit The Labyrinth in Jamestown yesterday and ordered one of their Vin Diesel's for lunch/dinner. It was great! It's loaded with Grilled Chick Pea Salad, Avocado, Bell Peppers, Red Onions, Cranberries, Diced Tomatoes, Baby Spinach, Vinegar, Sunflower Seeds, Vegan Sour Cream, and Hot Sauce! It was a 'Party In Your Mouth'.
In addition to the wonderful wrap...I ordered one of their Soups of the Day which was their Vegan Lentil Chilli and I get for my lunch today! While I was waiting I thought I would treat myself to one of their Espressos. I don't do that often at all but I will tell you it would totally worth it! They have their own Coconut Cream that they do as a milk alternative and the size of this Espresso was something I have never seen before! It was AMAZING! So yes...I am a happy camper after that visit.
An update on Gabby - she's been eating much better since we started giving her wet/canned food but now I think there is something else wrong with her. Not sure if it's a blockage or worse so tomorrow she has an appointment. She doesn't appear to be in any pain as she's the happiest cat I have ever seen! She's constantly purring and the sweetest girl!
I just don't have a good feeling about this. I've read up on Persian Cats often having problems with Poly-cystic Kidney Disease for which there is no cure. I'm wondering about a blockage now that's she's gaining weight from the wet food but it's all collecting in her stomach. She's NOT a young cat. We've had her for about 10 years and when we adopted her they said she was around 2 or so and had been homeless for what they thought was most of her life. I'm really worried about our little girl!

Lots of Vegan Foods - Hobo's, Bean Dishes, Sauces, Mac N Cheese, Snacks, Side Dishes, and Experiments!
I've sort of been a blogging fool today! So keep scrolling down! I have 4 posts today! This post is specifically a FOOD Post, tho! This first one I did a while back and did some greens up and on top of that did black beans and black-eye-peas with some onions and red peppers. On top - you see that awesome sauce? I have to say I LOVED this sauce and will be making it often! It has the following in it:
1/2 C Tahini, 1/3 C Hot Sauce, 1/4 C Water, 2 heaping tablespoons of Nutritional Yeast, 1 Clove Garlic.
It was totally yummy! Spicy but cheesy! YUM!
On the 4th of July my husband and I just stayed home - which was rare - but nice! He's been wanting to do some grilling but it's been so rainy here this season that it has been hard. We did get a little bit in that day, tho! He is a fan of what he calls "Ho Bo's" and I have always done a Veggie version with a veggie burger but I wanted to try it with Tofu! That is what I did here! This is the BEFORE photo. It has Potatoes, Mixed Veggies - Corn, Carrots, Green Beans, Onion, Tofu, Cabbage, Earth Balance, Wildtree Rancher Steak Rub. I have to say I was very excited with the way it turned out!
Here is the AFTER photo! I do like "crispy" and "crunchy" edges on mine! YUM! The one side of the tofu turned out a bit better than the other but the flavor was just what I hoped it would be! I'm looking forward to doing it again soon!
I think I forgot to take a photo of the Brown Rice Side Dish I did that day! Oops! It was basically Brown Rice with Carrots and Onions and I used a now discontinued Wildtree Product called Asian Potsticker, I believe.
I always look for Vegan Mac and Cheese ideas and I have to say this next one may be the best yet! I did tweak it quite a bit from the original recipe I found online!
This has the following in it:
2 T Earth Balance
1/2 T Dijon Mustard
1/2 T Yellow Mustard
1/2 T Hot Sauce
2 T Flour (I used Bob's Red Mills All Purpose)
3 T Nutritional Yeast
1/2 C Almond Milk (or more to taste/consistency)
2 slices of Toffuti Mozarella Vegan Cheese Slices
Small handful of Daiya Cheddar Shreds
Handful of Rice Crumbs
This next photo I have done a few variations of before but thought it was still a tasty mention. Pecans with Hemp Seeds/Hemp Hearts. All I did was a little Maple Syrup with Cinnamon and Nutmeg and Raw Cane Sugar.
Another Quick and Easy dish I did this past weekend was a chickpea side. Many of you know how I LOVE chickpeas! For this one here are the ingredients:
3 T Apple Cider Vinegar
1 T Bragg's Liquid Aminos
1 tea Dijon Mustard
1 T Tahini
3 T Water
2 C Chickpeas
1/4 C Parsley
Splash of Balsamic
I also used up the rest of the lentils I had on hand over the weekend! I must get more! Especially after making this with it! It was so GOOD!

2 T Minced Parsley
2 T Lemon Juice
1 tea Miso
1/4 C Roasted Sunflower Seeds
It was totally YUMMY!
For this next dish - I purely did it for experimental reasons as I am not as 'seasoned' with Wheat Berries as some people are. Here's what's in this one...
1 C Wild Rice (cooked)
1/2 C Wheat Berries (cooked)
Grapeseed Oil as needed (I used Jalapeno for a kick!)
1 Onion
2 Carrots
2 T various Herbs (I used Wildtree's Opa! Seasoning)
1 Clove Garlic
1 tea Dijon Mustard
1 T Rice Wine Vinegar
About 10-ounces of Mushrooms
This turned out pretty good, too! I like to call it Chewy Wheat Berries and Rice. I planned for a good portion for my lunch today but I also saved a little bit to try yet another experiment on! Veggie Burgers! I added Bread Crumbs to them and formed a patty and did them on stove top. The flavor was nice but it still broke apart a bit. Next time I will take Opal's Advice and BAKE them!
