I was VERY happy with this Stir Fry! I like the heat of the Jalapeno Oil with the Hot Sauce but also like the tropical flavors of the Coconut Oil and Jamaican Jerk Seasoning which had a nice Cinnamon and Nutmeg Combo to it, too! Sorry this post is so short today but I MIGHT have some exciting news tomorrow, MAYBE!
2 T Coconut Oil
1Splash of Jalapeno Grapeseed Oil
1 Large Red Bell Pepper
2 Carrots
2 Stalks Celery
2 C Broccoli
1 Onion
1/2 C Almond Milk
1 T Wildtree Jamaican Jerk Seasoning
1 T Hot Sauce
Juice of 1 Lime
It looks great, my daughter loves broccoli. As you now, I've been on an Ethiopian kick the past few days making veggie and non-veggie dishes.

DeleteCoconut oil? I thought usually people overseas use olive oil? That's so expensive here so mostly, we'd use peanut oil...or the controversial palm oil.
ReplyDeletePersonally my 'go to' oil is Grapeseed Oil. I have been getting into Coconut Oil a bit, too! I have pretty much stopped using Olive Oil. It's been a while since I have used Hemp Oil or Avocado Oil but those are ok for a treat every once and a while, too! I also have been known to use Flax Oil on occasion!
DeleteYes, many people over this way use Olive Oil, it seems, but many of us are branching out.
I only use a little bit at a time, tho! I have tried Peanut Oil but many of the oils are quite expensive...I agree!

DeleteThis looks wonderful, love the use of coconut oil as I've been using it a lot too. Costco here just started carrying huge jugs of the organic stuff for a good price.
ReplyDeleteI've been using it about once a week since I bought it online. I wish I had a Costco nearby!!! This was one of those stir fries that you thought about long after it was gone! I think I am going to do it again soon - maybe with some other veggies but the Broccoli shined here!
